Someone correct me if I'm wrong, but we don't have any place to legally watch the movies that have come out for this right? So is it safe to assume that without having seen those you really won't be able to watch this without missing a ton of context?

Yes, the movies are part of the main story and important to watch. Hopefully they get officially streamed at some point between now and when the new TV series airs.

The first movie, "Rascal Does Not Dream of a Dreaming Girl" did stream for a limited time on Funimation's site back in April 2020.
If any of the others were streamed (even for a limited time), however, I missed it.
