Oricon tracks Amazon sales- most of oricon sales for a lot of anime are amazon based. The predictions for how anime are selling are even based on Amzon rankings!

A good way to gauge a show's popularity that I personally believe in is the amount of porn it gets. As a regular browser of Pixiv it's hard not to notice when certain series pop up more than others.
Now I say porn specifically rather than just fanart in general because I think it takes a higher level of passion to even want to produce porn to begin with. So when there's so many artists that want to make the porn, and so many users that want to consume the porn that's a pretty good tell as to how popular it is.
And when Comiket comes around, well, ANN does post articles about which series get the most doujinshi.

You can't just take one factor alone and try to go with it, you need to look at the various pointers behind a project, since you have extreme cases where an IP is very big on one side of the industry but almost nonexistent on the other.
Symphogear, for example, is on track to top the seasonal BD sales chart for the second time, it also has great BD sales. Yet, it rarely shows up on popularity polls and has low amount of original content on Pixiv and NND.
Absolute Duo was among crunchy's most popular shows on that season and to this day is Winter 2015's 7th most popular show in Anichart... yet on all other aspects but streaming numbers it has soundly failed over time.

Being a fan of the genre, I've noticed that the "number of doujin/fan art" doesn't apply well to romance series, aside from harem of course. It seems like if characters are actually depicted as a couple in the show, fans aren't so desperate to draw them in hypothetical romantic situations.

I would like to know the business and possible legal reasons why CR doesn't have a visible view count on their episodes/movies. At least YT has the decency to do that though.

At first I was thinking in terms of a production's "Books" which might tell you if it was profitable or not, but really there's a lot of places to look since profitability doesn't always equal popularity. It's easier predicting hurricanes is what I think.

I feel like it's easy to tell what anime is and isn't popular based on how high it's ratings may be on websites like MAL or Kitsu or how many good comments there are about them.
Also, how often a person may talk about it or how many cosplays there may be and other things such as those in my opinion determine an anime's popularity.

popularity does not always mean profitability, thankfully disc sales are not the onyl metric we have, in the case of anime based of manga and light novles we also have those sales numbers , like certain animes selling a few hundred units but increasing their manga sales tenfold.

Kancolle, Touhou, and Sword boys all have a ton of doujinshi but were not anime series. (Again Kan/Swords at the time were not.)
If you see it EVERYWHERE like engagement rings, curry boxes, mobile games, and even bottle water it's popular. Although even then it's a mixed bag because what's popular in Japan isn't popular outside of it. Gintama is super popular but nobody knows about it in the West and it's hardly noticed.
There's also the sesonal anime of the month. Series that are popular and nobody cares about them after the season is over (until they get OVAs or another season.) Tokyo Ghoul, Ero Sensei, Danmachi, Aldnoah Zero, Cross Ange, Maid-sama, etc.

You're clearly not looking hard enough. I've got a sizable folder of Symphogear stuff, many of which I bought myself.
