I remember the the Completionist on Youtube interviewed Miyamoto who said that the game could be finished as soon as in 15 minutes but on the other could never be completed 100%.

The question that is surely on everyone's minds is this: Would an 84-minute speedrun still allow for sufficient time to adopt a chicken in the game?

(Well, I was going to say that, until I read that the main quest in Skyrim was finished in under 45 mins. So what do I know.)

There are 4 dungeons, though they are pretty small, and completing them is the main bulk of the story.
Outside of that it is mostly exploring and finding, shrines, villages, items and completing side quests. But I don't know if that classes as the core game.

Another aspect to take into account is that you can go straight to the final area after the starting area. The speed run is basically 30 minutes of the starting area, 10 minutes of horseback riding to the final area, and then 40 minutes for the final area.

Perhaps they are referring to the chicken in the starting village in Skyrim. You mustn't kill it.

Not to mention Zelda games have the infamous Cuccos, small domesticated birds that look and sound remarkably like chickens but can potentially kill Link if he acts abusively towards them.

Doesn't count for me. Unless you get 100% of the story, it doesn't count. That includes memories in this case. Not to mention he used an amiibo to get the 2nd fastest horse in the game. Using an amiibo is essential a cheat code...just instead of inputting commands you scan the item. I don't consider exploit runs, cheats (amiibo advantage), or skipping story content to be valid speed runs. I know other people do, but I don't see the point in skipping content like that.

In this instance, I mean not to revel in any arcane references! From footage I have seen, it is apparently possible to add chickens, horses and canids to one's party at various stages in the game.

You're not alone in this. That's why the "100% speedrun" category existed. That one will be substantially longer.
Some games, like Banjo-Kazooie, are done mostly under 100% conditions, and a just-get-to-the-end speedrun is largely not taken seriously by those specific communities. Some others, like the Pokémon games and the Mass Effect games, are not feasible to get 100% status, and so they'll pick some specific goal. Zelda has both categories taken seriously, as the means to accomplish their goals are so different from each other.
