People say "cancelled", but it wasn't like Viz had scheduled future volumes in advance & then simply didn't release them, like what happened with titles like Bastard!!, Strawberry 100%, & Reborn!. Instead, Viz simply released everything it had scheduled, as though that's all Viz ever actually licensed for the Dai manga.
Considering that the manga is co-owned by Square-Enix, due to the Dragon Quest license, I wonder if the reason we didn't get more is because S-E didn't bother licensing out more to Viz (likely due to low sales), rather than it being solely Viz's decision, as Viz hasn't really cancelled manga releases in well over a decade.

That's a shame, too, especially since I heard the Avan prequel manga is planning to continue on past the Hadlar battle, so it would have been really nice to get that as well, and in their simul-releases.

As an adaptation, yeah, it does a great job in telling its story in 100 episodes, without feeling drawn out. The central characters, despite falling into templates, are fairly well written, Pop being the best.
That said, it doesn't exactly have anything that elevates the material above any other title of its kind. While the fights are really well done, aside from the few 3DCG cuts, it still has that Toei issue where characters fight for a minute, and then stand around arguing about right and wrong. Too many characters are one note.
I am surprised that CR did not heavily promote it, I wouldn't say it got no promotion, I do recall seeing it displayed on the front page. But yes, you have expected them to have made a huge deal of it and dub it as fast as possible.

I’ve always suspected that was on Toei, who wouldn’t even let FUNi simuldub Dragon Ball Super.

Its up there with some of the best but like all of them, it too has some problems. The character development is amazing, cast is loveable and the fights are all fun. However, it loses some steam towards the end much like Dragonball and One Piece. It was almost as if Toei was really pushing to get it to 100 episodes.

They really didn't, the pacing near the end was just kinda average in the manga. But it still adapted a good 3ish chapters per episode for a near complete adaptation minus all the panty shots.

Not gonna lie, comparing Hadlar's proper on screen character development to time skip based character development like Vegeta's simply feels wrong.
Hadlar is more in the ballpark of Endeavor or Suko, he is simply a way superior written character.

For me it was Hadlar. It was refreshing seeing a Maou character actually being genre-savvy. The instant he revived he attacked the Hero, he took Dai seriously (other than keeping his origin from Vearn) from the jump, he wasn't afraid to personally join the attacks, etc.
