That last image looks like a screenshot from something Comedy Central might make.

From the looks of it, I'm willing to bet Matsuda-kun is privately imploring his creator for early retirement.

Is it fair to assume that the japanese loan word 'subculture' has a usage there much like how we use the word 'hipster'?

From what I've gathered it literally means "subculture". The cultural context is a bit different though, so it's probably not wrong to say that it's somewhat like "hipster". Young people often go into a subculture to be different from everyone else, to find what makes them special and in some cases to rebel against their parents and/or society.
Here sushi-kun said "Ah, she changed her opinion to seem cool!" and from that derived she's "subculture", so I'm guessing that there's a stereotype of young people in subcultures trying too hard to be different (here by calling something gross cute). We have hipsters like that in the west, so I'd say there are times you can use that word to imply a meaning similar to hipster.
This is just my own deduction from what my japanese teachers have said in class on the topic of subcultures, the japanese wiki page and my knowledge about japan as a japanology undergrad, so if someone is more 詳しい, please do correct me.
Edit: What I really came here to say was that I enjoyed the sushi-kun video.
