Are the ones on this site - http://play.com/play247.asp?pa=search&searchtype=r2title&searchstring=cowboy+bebop&page=search - the "uncut" versions? It doesnt have any info there and I cant find anything anywhere else telling me about it

There are no cut versions in America at least. It doesn't look like those are cut either.

I just checked the british board of film classification website and they state that all the episodes that have been submitted to them have been passed with no cuts made (but then I don't trust them)
