According to posts found on the Anime on DVD forums, as well as elsewhere on the Internet, that the Princess Mononoke (Mononoke Hime) is a high-quality DVD.
The DVD's Video Quality is reported to be superb. Disney's release includes seemless-branching, which allows both the English and Japanese opening and closing credits to be played, depending on which language is selected.
As far as the languages go, Anime on DVD states:
The disc is definitely anamorphic and there are both the Gaiman subtitles done as close captions and the Miyazaki script done as true subtitles.
