I wouldn't say that Lenneth "starred" in all of the Valkyrie Profile games. Yes, you play as her in the first game, but while she's in the second game, she's not the star. Nor in the third game, where, IIRC, you're actually working against the Valkyries (I haven't played the third game myself).

she's still the star in the sense that she's still the most important character of the story.
Tri-Ace was JUST teasing VP3 the other day so this is a massive surprise to me to see this so soon. Super hyped until I realized it's probably a stupid smart phone game

Hopefully this won't turn out to be a silly social game where you play as a player-made Einherjar who serves Lenneth or something.

It is true though that she is the only Valk to appear in all 3 games with a role of importance (even in the 2nd game this holds true), and being the overall most recurrent tri-Ace character to ever make cameos in other games.
She is popular enough to be the company's mascot '-'

Considering how recently the producer mentioned it, there's no way this is related to whatever his "VP3" ideas are. This is definitely a spin-off of some kind. But hey, as long as it's good, there's no problem with that.

Still no Valkyrie Profile: Hirst? I am disappointed.

I'd personally like a VP based on Brahms. Hrist is pretty much a villain for most of the game even if she isn't really evil.

She isn't a villain, you're looking for "antagonist ordered to do as she's told". Hrist is more of the hardened heart type, who normally follows orders from on high without question. She obviously doesn't do the warm fuzzy feelings, but she certainly wasn't above caring for mortals once she realized Odin and Freya had no qualms about sacrificing as many lives as it took to keep Midgard at the top of the power ladder. In a rare display of opposition to her lord, she was disgusted with their actions and chose to do her own thing, following Alicia, Silmeria and eventually new god Lenneth to set things right again. Hrist was only proud to serve because she's always been extremely confident in her ability to handle things as she saw fit. Yes, she had Alicia's father beheaded, but she was only falling Odin's orders unquestioningly; she wasn't allowed to have an opinion or suggest a different course of action (not that she would have at the time). The fact she delighted in it meant she's classified as the dark trump card soldier; they usually aren't the friendliest types.
Hrist simply went through a pretty interesting change after spending time as Leone among Alicia and the others. She eventually realized why humans meant so much to Silmeria and soon reached the same conclusion.

Have fun being furious. I'm actually greatly enjoying KHUx and Tales of Link, which are pretty developed for being on such small platforms.
