From the music to the story (that could have gone on forever without the tragic hero ending) to the one ep. one story format. I'm sorry but it's just the greatest.
Okay thankfully I kept my fan rant to a min. Now what is your favorite cowboy bebop momnet.
Mine has to be the ending of the ep where Ed meets her father and decides to leave the bebop, the music and the scene where Ein turns away then decides to follow Ed is... heart breaking? But above all amazing. Kudos to the creators for having the guts to finish this anime the way they did. The last ep. is hard to watch.... still.
Anyway please share you favorite cowboy bebop monents... hater need not respond

Well, darn, it's totally been echoed here already, but the end of episode 5, from when "Rain" starts playing to the ominous ace of spades Spike catches at the end is not only my favorite Bebop moments, but I think one of the best-paced moments in all anime period.
Seriously, film students should watch that five amazing minutes of Bebop for a little lesson on how to communicate a LOT with very few lines of non-expository dialogue.

The last few minutes of Jupiter Jazz pt 2 when Laughing Bull says:
"That's not an ordinary star, that's a warrior's tear."
That was just epic. And then the 'camera' raises up to view the deep red sky and the mountains in the distance; it made me think, "Damn...we are so small in such a huge universe." It was just like some kind of revelation that hit me out of no where, you know?

When we finally learn Faye's origin, it's just great to see her story told. And when she finally realizes who she is and finds her home, that's a great ending for her story arc.
The entire episode of Pierrot Le Fou is just cool. The shootouts, the backstory, the crazy ending. It's perfect.
The Real Folk Blues and Tank are two of the best songs in Anime History.
I love the way the back story unfolds. It feels like an old Fim Noir with the calm music and muted colors.
In short, I love this series and am actually one of the people who saw it the first night of Adult Swim, back when they aired Candidate for Goddess and for a short time ran Tenchi Muyo (ova).
