I read this in a Gundam Seed review, but is it really like this? Please no spoilers!
"The violence in Gundam SEED is on par with the violence of other Gundam series -- at least until the last half of it. The first half contains scenes of pilots' bodies being "overtaken" on the screen by explosions within the cockpit. Some soldiers are shot during the first episode, and blood is shown.
However, the second half of the series becomes surprisingly intense for a Gundam series. Blood is shown far more frequently. The deaths of pilots in their cockpits are graphically depicted. In one instance, a pilot's body is shown exploding (with a brief glimpse of blood and entrails before the camera cuts away), and another pilot is sliced in half within his mobile suit. The sword is seen beginning to cut into his abdomen and then we get a close-up of his face within his helmet, which is soon replaced by nothing but red blood. Because this pilot is a major character, the show often flashes back to this scene and always shows these graphic details. Even worse is that the death is intensely emotional, which compounds its graphic nature. Later on, another character is seen with a weapon beginning to impale him from within his fighter jet -- another scene repeated often due to the pilot's role in the story.
This graphic violence is not contained within the cockpit, however. We see humans running away before exploding during a nuclear attack. One major character is engulfed by fire. Another major character is repeatedly shot by a gun; because she is shot while in a zero gravity environment, her blood floats around the characters throughout the scene. Her assassin is quickly killed, however, when a mobile suit destroys the bridge on their battleship; his body is violently thrown backwards before being "overtaken" on the screen by the explosion.
Other less violent deaths occur throughout the second half, but their impact on the story is severe and each one is highly emotional."

Yes. It can be rather gory at times in the latter half.

NOT TV-MA gory. I wasn't concerned about watching it with my 7 year old kid.
Except for the whole entrails thing, it's just blood. There's not necessarily that much of it (it's not spurting or pooling or anything like that), it's just more than you'd be used to seeing in a Gundam series.
Oh, and in the movie version, I believe they re-animated the entrails scene and it clearly shows the character's head flying off too. If you're concerned, that might be something to consider.

It's certainly not TV-MA. There's one particular and very brief scene where you see a body explode and its a bit on the grotesque side. Otherwise, its just rather bloody. Bloodier than you tend to see in the first half, though the first half had its share of blood as well.

Yeah, a lot of that stuff happens but actually all of that is pretty par for course for most Gundam series I have seen.
