That's surprising, thought for sure it was gonna be an adaptation of the winter arc. Shame we'll be waiting awhile for season 2.

Right? The way the season ended it made sense they'd jump into Winter and then maybe use the special as the first three episodes of season 2 (ala Demon Slayer). I wonder how they'll slip this into the story.
With the manga seemingly nearing its climax the chances of more seasons of the anime are feeling less likely.

Dr. Stone is getting a new season next month despite the manga ending multiple years ago at this point. If Undead Unluck is popular enough (not sure how it compares to Stone) it's possible they'll get more seasons too.

When they say this is coming Winter 2025 are we talking the next 3 months or late next year? I mean, we're entering the Winter 2025 anime season next week. I just noticed some reports saying Q4 2025, but for that to be true and still be winter it would have to basically be the last week of December 2025.

My understanding is that Undead Unluck DVD sales were disappointing and a second season is dependent on Disney since they (or Hulu) streams worldwide including Japan (which probably explains why the DVD sales were low, Japan isn't up to Western standards for streaming anime). Add the seemingly impending end to the manga, it doesn't seem promising. The show at least appears to be a very expensive one to animate, especially with all the flashback nonsense they included in the first season. It may not be worth the effort.
Dr. Stone has had periodical new mini series and one shots to keep things relevant, including a new volume back in April.

That has nothing to do with being expensive, specially when most series have generally the same budget. The actual biggest possible obstacle is the fact that there is a major overlap in staff with Fire Force.

I was not expecting an original story, but it could be fun.

That's not true about the budgets. Flashbacks and animation recycling is a pretty standard tool for stretching a budget. It definitely had better animation than a lot of the sub par isekai schlock out there (and I'm saying that as someone who loves isekai schlock).
I'm not really seeing anything comparing the two shows in the Encyclopedia (using FF seasn 3 credits) that would prevent them from being simultaneously animated.
