Do court cases normally take this long? Especially when there's no contention as to what actually happened? I suppose it doesn't matter here since I have no idea how he could avoid life in prison, unless they don't do that in Japan.

Death penalty also exists there and arson is usually treated with that manner, especially in this case, when we're talking about one of the worst mass murders in Japan since WWII and committed against a beloved anime studio no less. I personally think that's the exact reason he committed this crime, so life inprisonment would be worse for him, and for others who might get the same idea.
And as for the length, my guess is bureucracy. There are steps you just simply can't skip over, as the system doesn't allow it. And you need to go over every single one, or else you might risk your job and possibly your freedom. Especially in a extremely sensitive case such as this one.

Arsonist was hospitalized for burn injuries and then evaluated for psychological state. And also, pandemic happened.
Better go slow and steady instead of speeding through prosecutorial procedures and risk any suspicion of unfairness, even if his guilt is in no doubt.

Is there any information relating as to how the arsonist either (A.) knew or (B.) correctly inferred that the front door would be unlocked at that particular time?

With his crime/murders planned & organized, he's definitely be found guilty in the end.
What I'm waiting for if he'll get live in prison/asylum or straight to the gallows.

Considering it's Japan, even if he gets death sentence, it'll take a while to be delivered. It took more than 10 years for the perpetrator of Sarin Gas attack's death sentence to be delivered despite it being the biggest massacre in Japan at the time.
