I am trying to learn as much as i can about the roots and background of anime and as such have started purchasing books on the subject, i currently have ordered
The Anime Encyclopedia: A Guide to Japanese Animation Since 1917
Jonathan Clements, Helen McCarthy
and
Anime From Akira To Howl's Moving Castle: Experiencing Contemporary Japanese Animation
Susan Napier

are there any others or one definitive 'bible' i am not aware of?

You may want to consider researching Manga since Anime does borrow from it..... Also, you might want to consider studying Japanese culture from an anthropological perspective as Anime is a Japanese phenomenon. Many people, when studying a foreign language, neglect the anthropology of the culture to their detriment.

Japanese Schoolgirl Confidential: How Teenage Girls Made a Nation Cool by Brian Ashcraft

This book isn't completely focused on manga and anime, but it does have a section in it that talks about how school girls affected this type of media and video games. Other than this one and the other two you mentioned I can't think of anything else.
