While not as popular here, Gakuen Alice severely needs a remake. Out of the 30+ novels they adapted about 6. The anime hardly covered any major plot point and had such a lack luster ending.
I agree with Karekano the anime was such a snore fest and again, didn't cover the proper end

I think Anno's adaptation elevated it above the source material. When I read the manga I was not impressed. Kare Kano's energy, humor and wonderful OST opened up a whole new host of genre's/settings for me. Before Kare Kano I'd been a strict sci-fi, space opera, fantasy kind of guy. After Kare Kano I started being open to shoujo, romcoms with high school settings etc..
Granted, considering how badly Gainax ended it (those last 3 or 4 chapters were just sleepwalked through), a remake might be in order.

Love this article.
I wish Aoi Hana / Sweet Blue Flowers would get a continuation. Or remake. Anything. I remember the animation being okay, but it was far too short. O and... the babysitting anime... what's the name... Aishiteruze Baby! There was barely any animation in that series!
A modern Glass Mask anime would also be fun. The old one was good, or at least the parts I could find on the internet (couldn't finish it because many episodes were hard to find).

I'd be all for a Kodocha remake if it is simuldubbed with Laura Bailey reprising her role as Sana. (IIRC, she said in the audio commentary for the last volume of the anime released in the States that she'd love to do more of the series, as Sana was one of her all-time favorite characters.)

Actually Setsuna and Sara were not lovers in past life. I don't remember if they even met face to face.
Lucifer was the one in love with Alexiel (Setsuna's original)

I'd love a more faithful adaptation of Kare Kano. I LOVE the original manga, have read it multiple times. The anime was so hideous I was about ready to throw things, especially by the time it got to the popsicle crap. I kept wondering if the anime makers had even read the manga at all.
I'd also like a Kamikaze Kaitou Jeanne remake. I enjoyed the anime when it was out, then read the manga and was like wow, there was some great stuff there they cut out! Though they did the same with Full Moon o Sagashite, so I wondered at the time if the mangaka had either had no say in it or had given her blessing for them to make them so different. Really I'd love to see both shows remade to be closer to the source material because while both animes were great, the manga had even more emotional wreckage to pull.

There certainly are fewer mainstream shoujo manga made into anime (including classic magical girls where they don't fight demon lords, once that trend started even things like Akazukin Cha-Cha got shoehorned into that as an anime, totally different than the manga.) Partly it feels like there are live-action adaptations instead, but maybe there's other reasons too.
How about a couple of things that only got OVAs and not full series?
Here is Greenwood is one, and also about ten years ago got a live action series, speaking of live action.
Please Save My Earth is another.
Even Tenshi Nanka Ja Nai.
The KareKano anime was great, except as mentioned for the ending being rushed, even if it did feel different than the also great manga. Not sure that you can exactly advocate for a remake for Fruit Basket type "be more consistent with the manga and reach the end" reasons if you also want to change the moral to "you can't fix someone," though. Of course you can always advocate for redoing it to fit your particular preferred moral (not that it's incredibly easy to do so, while a moral of "love conquers all" leads to unrealistic expectations of how likely it is to fix a person it's at least uplifting, whereas a moral of "you can't fix someone" as the main point of a show tends to lend itself to depressing lessons like "people who have suffered abuse as a child are irreparably broken people that you should stay far away from and let suffer lest you get caught up in their stuff, save yourself and never allow yourself to be hurt" that would be right at home with the cynicism poked fun at in Kaguya-sama.)

The babysitting anime? And here I thought you were talking about Akachan to Boku. Which was good, but doesn't need a remake. Or maybe Gakuen Babysitters, but that's recent. Or maybe Daa! Daa! Daa! (aka UFO Baby) There's a lot of babysitting shoujo manga turned anime, but none I really feel need to be redone.

They've done it a few times, but I suppose they've never had one where the main character really could pull off the main character's supposed amazing acting chops.

That's a remake about as unnecessary as the recent remake of Legend of the Galactic Heroes. You could, but the original is so good that why bother? (Especially when Revolutionary Girl Utena already gets you most of the rest of what you'd want.)

As long as Johnny's is kept the hell away from it this time (also Daichi but that would be expected to happen).
