I have two:
The first is Rise, the opening theme for Ghost in the Shell: Stand Alone Complex 2nd GIG. This song is both energetic and beautiful; the techno rhythms and the strong beat in the background work terrifically with Origa's haunting vocals. The lyrics are emotive and chilling in places, and when the chorus comes around one can't help but sing along with it. I've listened to this song easily over a thousand times, and I'm still as awed by it as I was the first time I heard it.
Another song I've had for aeons and am still not bored with is Ryuuro from Shaman King. I have sort of an emotional attachment to this song, since it's how I first encountered Paku Romi (who I now believe is God), but I also love the pace of this song and the interesting mix of techno, rock, and accoustic guitar. The vocal is sharp and powerful and almost like verbal gymnastics, and the lyrics are really poetic and a good representation of the character they represent. Of my vast collection of anime music I think this is the song I've had the longest, and I still think it's amazing.

This is an interesting topic since I think that there are definitely songs out there that I once enjoyed, but have since gotten tired of. In general I notice that those high energy and catchier OP songs tend to initially suck people in, while the more poetic and elegant ED songs are the ones that evoke emotions and tend to not get old.
I know there are many people who listed The very touching English ED song from Wolf's Rain "Gravity" on the favorite songs thread. This song is by far my favorite Maaya Sakamoto song (it's the only one I listen to on the CD it's featured on) and it really captures the essence of the series. Granted at only 4 years of age this song really isn't a very old song, I believe that it will be one that will always be in the top ranks for me.
Much like the last song on Sakamoto's greatest hits Bonnie Pink's 2 CD greatest hits ends with the Gantz ED song Last Kiss. This for me is the best thing about Gantz and I wish the series reflected more of the melancholy and introspective nature that this song evokes for me. Oddly enough the animation that goes with this song really works well, and I wish there were more moments like this in the series.
I'm also a long time Mio fan and the Area 88 ending song Kanashimi no Destiny has been a favorite of mine since the mid 80s when I used to play the LP regularly. The lyrics of this song are also very beautiful and I love how the song is dynamic and travels from delicate to bold. I also love Mio's very powerful Mieru Daro Byston Well from Dunbine which also has this graceful and powerful sound.
It looks like the emotional connection is what makes me internalize these songs and make them timeless, I also tend to like songs that have the mixture of grace and power. High energy pop songs on the other hand really get old to me.

There is one anime song that I can think of that I absolutely never skip when it comes into the rotation, and have loved it for about a decade: "Yuzurenai Negai" (performed by Tamura Naomi) from Magic Knight Rayearth. I've raved about this song before, and I'll do it yet again. There is something about the epic feeling of the song, the slow, soft start transitioning into electric guitars and then a blend of almost staccato-like singing and and more melodic moments. I originally fell in love with it in combination with the opening sequence to the series (it fits perfectly--something that doesn't always happen for me) but it wasn't long before just the song alone could swell the same emotions in me.
On a lighter note, I also completely adore "Rashiku Ikimasho" (performed by Meu) from Bishoujo Senshi Sailor Moon. I first heard it while watching the Ami-chan special, and immediately began associating it with the character. It has such a light, upbeat melody that you know is hidden somewhere in Ami's shy exterior (as seen in the special as well as certain episodes of the series.) I soon learned it was the ending them for part of the SuperS season as a whole, but for me, it will always be an Ami-exclusive song.

Probably my favorite anime songs are:
"Higurashi no Naku Koro ni" from Eiko Shimamiya- it's just so sexy and energetic and darkly inviting. It's one of those songs that you could easily turn into some sort of death metal or something a stripper would dance to and it'd still make perfect sense.
"Over Night" from Aya (Chevalier) is a rocker that never gets old. I'll sing that on my way home from work at least a couple times a week.
"Yume Mite mo Ii ja nai" from Hiroko Kasahara (Seraphim Call) is one of my favorite songs to chill out to. The opening piano line is really awesome, and I still get chills when I hear the vocal hooks in the chorus. Really great stuff.

i love a bunch of op/ed anime songs, but a couple of the many songs i don't get bored of is
Houki Boushi - Younha, an ED from Bleach, i don't usually like ED songs for some reason, maybe just those songs i don't like, but this was the first ED song that i listened to and every time i heard it, it still sounded as good as the first, even now i look at my ipod list, and i've played it more than any other song i've listened to (in my anime song playlist) it's such a happy, fast paced song not too many ED have, and the singing by Younha is pretty good too
another one would be Rewrite - Asian Kung Fu Generation, OP from Full Metal Alchemist, it's not really the whole reason, but maybe a tiny deciding factor to watch FMA was because of this song, i enjoyed Haruka Kanata from them, and i checked what other animes they did songs for, and of course i heard of FMA, so listened to Rewrite, and it became one of my favorite songs ever, with deep lyrics, and great guitar playing

Cruel Angel's thesis- I just find it iconic and get some inspiration from listening to it. It feels slightly uplifting, yet at the same time has a sad element to it.
Libera me from hell. Three simple words. Fight the powar! I'm not much of a rap fan, but I love the mix of classical music and the rap, in combination with the piano. The level of GARness inspires me and I constantly find myself listening to it.

Anime songs that I don’t get bored of putting on my playlist would be Kiri by Monoral from Ergo Proxy and Duvet by Boa from Serial Experiments Lain. I love Kiri because I just don’t get tired of hearing the guitar intro. It has an industrial feel to it and the song really fits the series. The “come and save me” part of the song really captivates me. Not only it infuses the meaning of Ergo Proxy but it really gives out the true essence of the series. I just love post-apocalyptic anime since we can see reality to people when it comes to survival and Kiri makes me remember all that. While Duvet… I also love Duvet not just because I love the series it corresponds to but the instruments and the blending plus her voice they’re so natural that I tend to stop what I’m doing and close my eyes to hear the entire track. Not exaggerating here but these songs are really good that you’d remember the lyrics and the melody after watching 2 episodes…

Duvet is another song that I've had for ages and still love. There's something really down-to-earth about Jasmine's voice, and I like that (since most vocals you hear in anime sound really artificial). The song also has a sort of fairy tale-ish quality about it; it's like it's whimsical and threatening all at the same time. I'm learning guitar just so I can play the accoustic version ^-^

An anime song I never tire of is Anita, 12 years old, from the second R.O.D. the TV soundtrack. It's bouncy, enegertic music with diverse instrumentation that sounds as if the band had a lot of fun playing it. In the context of the anime, it's playing in the background during the sisters' first trip to Jinbo-cho.
Another two would be the OP and ED of Haibane Renmei. Both are beautiful and fit the series perfectly. The OP is upbeat while still being laid back and soft. The ED is melancholy and questioning. And Heart of Air does a tremendous job with the vocals.

I feel exactly the same way about Yuzurenai Negai (however, I find the Spanish version to be rather silly-sounding because they changed it up a bit).
Another favorite of mine is "Kiseki No Umi" (Sea of Dreams) from Record of Lodoss War: Chronicles of the Heroic Knight. The song is absolutely beautiful in the way that it contains all classical instruments without any synthesizing, and the women's voice that sings the main part is hauntingly beautiful. A fan also made an incredible version by completely translating it into english, and singing it herself.
And on a final note, I also liked the intros to Gokusen and Slayers NEXT.

I'm still not tired of "God Knows" and "Lost my Music" from The Melancholy of Haruhi Suzumiya. Both songs are very energetic and memorable for me that whenever I hear either song, I just can't help but sing along (and dance along ).
I also like "Sakura Kiss" from Ouran. I think it's very cute and catchy. It's also cause I'm a fan of Chieko Kawabe that I never think her songs are boring.

My two songs are:
"After Dark" - Asian Kung Fu Generation. This is a song I don't get bored of 'cause it's really catchy and it's just a good song.
"No Boy, No Cry" - Stance Punks. This is my second song that I don't get bored of 'cause when I hear, it gets stuck in my head and I have to deal with it for the rest of the day...

The closing music of Crono Chrusade still plays out of my car's CD player. It's also proof that Yuki Kajiura can compose some brilliant music when she's not doing her signature gothic choral thing, which I love as well and play quite often. Playing "Saddness" from the Petite Cossette OST seems to improve my driving skills whilst driving on the motorway at 80. Even the car seems to dance to it.
I also love the ending Ms. Kajiura did for the KOR, Summer's Beginning movie.
RahXephon's opening "Hemisphere" is great, but the ending "Yume no Tamago (Fledgling Dream)" by Ichiko Hashimoto and Mayumi Hashimoto. is even better. So smooth, haunting and relaxing.

I feel that the two anime songs i have never got tired of and never will were from Cowboy Bebop. The first is Green Bird sung by Gabriela Robin. It is a charming song, the simple vocals and piano combination tugs at the heart strings, the images it accompanies in the anime are striking but the song easily stands by itself. As to why it is my choice it is hard to say, i remember that when i heard it seemed to remain with me and always will.
The second is Rain, whether it is the male version sung by Steve Conte or Mai Yamane. Once again it was the combination of the visuals and the song which drew me to it at first but then it became a song which easily stood alone the words striking a chord within my mind.
I found that alot of the music within the cowboy bebop series was very good, i liked songs like Elm and Space Lion, the music and visuals always matching well together. I take alot of notice of the music in anime because i am a fan of anime soundtracks, but these two songs where the ones which immediatly came to mind.

There are a couple of Inuyasha songs that I never seem to get tired of. The first one is Shinjitsu no Uta by Do As Infinity. It's because of that song that I feel in love with the erhu. I just love how that instrument sounds. The second one is Come by Namie Amuro. I like the vocals and I have fond memories of that song when I used to watch Inuyasha on Adult Swim (the nighttime theme of the EP plus watching it at night with the moonlight made for the perfect combination).
Two other songs I can't seem to get bored of are Soramimi Cake and Motteke! Sailor Fuku. Both songs are so upbeat and catchy that you can help but get those songs stuck in your head.
