I wonder how many Pokemon they can think of making since it's now 790+ Pokemon that they have in the games.

Ken Sugimori supposedly has well over 1,000 designs for different Pokémon in various notebooks and sketchbooks, and he said this back in Generation II. The man's a factory when it comes to designing these guys.
As for this line, I thought Eevee and the Pokémon it evolves into have already had a ton of merchandise. I've found at least seven different Glaceon plushes, for instance, as I had been looking for a good one for a while.

I want an evolution for every type.
Would be cool if there would be three next time, but I kind of doubt that. I hope it's not just one like last time.
Maybe the next evolutions are dragon or steel. Dragon might look weird, though.

I don't remember that comment, but I can believe it. Not to mention, he's hardly the only one designing Pokemon. They have an entire group that design at least an evolution line or two. Sugimori tends to do the finalized artwork, but the concept, original design, and even the descriptions tend to come from different people. Sugimori isn't even in charge of the human designs anymore. He practically traces Ohmori's work and has since BW. Which isn't a bad thing. I like both the older (FRLG-era) and newer styles really well, and though they're distinctive, they still blend together well enough.

He could also have been exaggerating. However, my previous statement also and especially applies for coming with new Yu-Gi-Oh! cards for the manga, video games, anime, and actual game.

Well, for Yu-Gi-Oh!, it's pretty obvious that Kazuki Takahashi doesn't come up with all of them, even if he gets credited with all of them. And like with Yu-Gi-Oh!, there won't really be a limit to how many Pokémon there can be, at least until it reaches the point where it becomes difficult for a Pokémon game to accomodate them all, between budget, manpower, time, or some other resource.

In my heart eevee is the cutest pokemon in all of the pokemon franchise (sorry pikachu). She's (well, he too) just so adorable! I wonder if they will add more to the evolution pallet.
