I just got started watching FMA, and was wondering if the level of detail in the animation backgrounds continues, or if it slacks off in the series.
I really liked how as Ed and Al are travelling by train to see Lt. Col. Mustang, the bridge the train rides upon has the arches reflected in the water they are crossing, completing full circles. Most animation would just end the bridge at the water, not bother to reflect it. Also the waters seen through the windows must have been done digitally, it looked like water. But it didn't look out of place.
I would like to discuss this and other anime that have high levels of detail in their animation, for example, GITS, and Last Exile. Sorry, still haven't seen everything, so bear with me if I missed your favorite please.
Things like little "human" motions, such as in the OP sequence of FMA, Winry just jerks her head a little, as if a decision has been made. Times where a character does something other than make a fake laugh and scratches the back of his head.
Where backgounds have more than 3 colors. When no matter how small or far away something appears, it is still more than a blot of paint. You can see something in it, not just barely be able to tell what it is.
These are the things that really grab me, and make anime so special to me. Because I was in love with Fantasia, Wizards, Allegro Non Troppo, and Fantastic Planet before I had seen anything of anime. Well, maybe Speed Racer was out around the same time.

I would have to say the quality of animation in FMA keeps its integrity. Very nice, I would say. It's true, you can tell a lot from a well-drawn face, and I think that's something FMA does very well on. The animation is a whole 'nuther language in itself. There are things to be said even in the small details of the picture, and there's so much to be seen from a face. More emotion gets put into the face than words can ever describe.
Last Exile...dear god, it's beautiful. Best animation job I've ever seen, especially with the 3D work. I love the art put into the movement of the ships, and the whole feeling of grandeur, of something epic, it adds to the series.

I love the 16:9 ratios of Last Exile and GITS SAC. You can see even more detail with the larger images, and I believe they both have slightly better detail than FMA.
If you watch Last Exile on a big enough screen (60" here) the difference between the 2D and 3D pilots become more obvious, especially when they switch between them. The 3D ships are very detailed, and I love Gonzo's smoke and cloud effects. Pioneer/Geneon always do amazing transfers with very strong contrast ratios. I only wish that this series would get a 5.1 remix.
The character designs for SAC are very detailed, and facial lines can be seen even when characters are seen in a long shot. I don't know if it's my tv or imagintaion, but I tend to see a faint double line (over modulation?) around images on these DVD when it is too bright. This is most apparent during the Tachikoma Days. The transfer for the DVDs are good, but not as clear as most Funimation and Geneon titles in minor ways.
The other really detailed series that comes to mind is Samurai 7 which also has a nice DVD transfer. I hear that the series was mastered in HD, which means that it is all ready for a HDDVD or Blu-Ray release. Although I was tempted to wait for a high def version the storyboards, and obi wrapped boxes were too cool to pass up.
In general the post DVD/LCD/plasma generation of television shows tend to have a higer level of detail which becomes more obvious when you watch older television series. This has become very obvious as I'm rewatching Votoms and Macross, which were both created for the small screen.
