"Ultimate" was only used during the summer in promotional material (such as pamphlets, posters, etc) to hype the series.

The full title of the series is simply "Hellsing", just like the TV series and manga.

It looked like they were going to call it "Kouta Hirano's Hellsing" for a while (it was on the pamphlets handed out at AX 2005), but they dropped that too.
