As someone who really tried to get into Fate/EXTELLA on PS4 who has no real knowledge of that series is this one a good one to just start up? While I liked the gameplay in that one I really really could not keep up with the story. This one sounds cool to me but I'm concerned I'd not get it much since I have little knowledge of Fate.

This is its own thing, EXTELLA is technically part of the larger Extra series, and it can get a little confusing. Samurai Remnant was designed and written to be heavily inspired by original Fate/Stay Night where it's the Grail War with its conspiracies and interactions between master & servant so you can jump right in.

You should be able to start with this one. You'll miss several references, but the plot and characters will probably be manageable...presuming they are presented half-decently. EXTELLA was tied to Fate/Extra, so it was a slightly different situation.
There isn't really a good place to start into Type/Moon shenanigans- just pick what's interesting, and make sure it isn't a sequel- only really an issue with theExtra related stuff. Maybe look at the Fate/Zero anime- its fairly well regarded and covers some of the basics of the setting that you'll probably see paralleled in this game.
Of course, I have no idea how the plot of this game will go- I'm making some assumptions. Not unreasonable ones, but assumptions nonetheless.[/i]

I strongly disagree about starting with F/Z as seen with a lot of mainstream viewers, it sets the wrong expectations of the kind of series and tone Fate/ is (while it's spin-off into different main universes, the tone and feel has always come from Stay Night.) You should watch Unlimited Blade Works and Heavens Feel first and then check out Fate/Zero.

I hear you, and while you are correct- it is tonally different- I think that misses my point. Each entry tends to be different from the next, including in tone. Zero differs from F/SN differs from Extra differs from Apocrypha etc, etc. Not even getting into the larger Nasuverse. So, as I said, pick what is appealing to be a starting point. Zero is my mention here because it is one of the more lauded entries that explains the baseline to some degree. The FSN stuff (the old Studio Deen show, Unlimited Blade Works, Heavens Feel) is good if they are interesting to you. I don't like to recommend them because I find them incomplete in isolation, owing to their origin of being separate routes of the same VN. But they definitely are good entry points if you'd like to see them.
Really, the entry point requirement can be boiled down to three bits:
-You are interested in the story
-Its either standalone, or part one. Starting with Extella-Link would be bad.
-You never watch Last Encore.

I started out unsure about this one, but every new thing I see has gotten me more interested. (It helps that it comes out on my birthday.)
Not always the biggest fan of Higashide's writing when it comes to plot and structure, but he's done some great character beats, and I just finished Sakurai's Prototype: Fragments, which I enjoyed a lot, so my hopes for the story are growing.
I wonder how the gameplay will stack up to Persona 5 Scramble, since that seems the nearest comparison as a pseudo-musou thing.

Okay, I get what you're saying and yeah that's fair. I still feel bad for everyone who watched Last Encore and didn't know what it was covering, lol.

FWIW It's not solely Higashide & Sakurai writing it, interviews make it very clear this was born from Nasu & Shibusawa Kou of Koei Tecmo fame.
So Shibusawa's direction ensures the final product's quality. But what about you, Nasu? How were you involved in FSR's production?
Nasu: When he told me all about FSR, my schedule was too packed with other jobs for me to be possibly able to accept it. Even so, the project Shibusawa pitched was charming and I really wanted to make it a reality, so I tried what was possible at the moment. Which was to ask the FGO writer team for help. I mainly asked Higashide Yuuichirou and Sakurai Hikaru to proofread the script in parallel with FGO's production. I requested them to treat this with as much passion as they treat their own chapters and characters. With a trustworthy response from the two of them, I could finally relax and participate in FSR's story and lore production.
What specifically did you do?
Nasu: The entire FGO writer team, myself included, got together to define the cliff notes version of the plot and all the character profiles, then the Koei Tecmo Games writer team wrote the script based on that. Then they returned it to Higashide and Sakurai for supervision... and that's where it got into a loop. And after that's all concluded, I checked the general state of the final product. Most of my energy is allotted to FGO's production, so I couldn't be too thorough about it, but I took the role of general supervisor following the policy that I should only comment on the parts that really were not negotiable.
Shibusawa: I believed that since we were making a Fate/ game, I had to assign it to my best staff. And for that, I told the producer to leave FSR's script to the writer team we used for Fire Emblem: Three Houses, which received excellent reviews on Metacritic.
