When I found out the remake was covering content from both of the original's seasons, I was hopeful that it meant something new was possible. It was at least poised to do so, but I didn't expect quick confirmation.

I've always wondered why the original anime skipped this arc.
At least it's finally getting its chance to be animated now. I'm looking forward to it.

This is it, it is finally here, we are finally going to see the stuff we waited all this time to get animated.
This is where the real stuff people wanted is finally here.

My guess is, they wanted to keep the story focused on Holo and Lawrence's relationship above all else for the most part, especially after the Amati arc were their fidelity was given more focus.
The last part to the OG anime also had a similar setup and probably was written to give their bond a lot more closure, were as the 4th one was focused more on the worldbuilding and Holo's backstory.
Given that they may or may not have known if this was the stopping point for the anime, they likely wanted to end on a memorable, personal note, than, than something that felt like it was written for the broader story.

So as someone who hasn't watched any of this adaptation, are there any particular new bits I should look at before this arc starts, or am I good to jump right in? Granted it's been many years since I watched the original adaptation, but if I wanted to refresh myself on prior arcs I'd probably just pop in my BDs.

Other than the character Chloe from the first season not existing in the novel and replaced by her original counterpart Yarei, the remake has pretty much stayed the same up from the first adaptation until this week's episode, in my opinion this remake is even stronger than the original (this is coming from someone who liked it enough to rewatch it multiple times) so if you have to do it again I recommend the remake.
I'm glad they're going for a 1/1 adaptation this time with previously skipped vol 4, it finally makes sense.

Have to partly disagree with the two previous posters. The remake is stronger on some aspects (especially animation) but weaker on others (especially Holo being far more visually intimidating in wolf form in the original, which is a point of emphasis in the novels). I find the two versions to be a wash overall through episode 19.

Personally I think new version is much more "alive" and better overall, with better emphasis on characters dynamics thanks to their much more expressive body language (especially Holo's ears and tail).
One weakness of new adaptation is Holo's wolf form, which is unfortunately much worse than in previous version (far less intimidating, more fluffy and nice looking).
I would overall advise to watch new version from beginning if you want a refresh.

I've been binging the old series (after the new one hooked me), and personally I think there are very few differences; even the animation quality (or lack thereof, though it's not generally important) is about the same in the two, I think. The shows generally line up closely shot-for-shot and scene-for-scene; I doubt you'll notice a break in continuity, unless you've just forgotten some of the plot.
The wolf-form and Cloe vs Yarei differences people noted are there; voice actors have changed; OP and ED are different; and the currently airing version has a brighter, cleaner color palette than the original. I don't think there's really much else to point out that differentiates the two. In general I prefer the original anime series, but the differences are very modest, and obviously the original series doesn't have the new arc.
