I go through spells when I re-watch series for various reasons. If it is a complex series I will re-watch it in an attempt to better understand it. Of course there are also series that I watch again for the sheer enjoyment of it. A short list of series that would be considered in my "re-watch" catagory are:
NG Evangelion- (IMO) This series has so many levels and sub-levels that I learn something new everytime I watch it.
SE Lain- Much like NGE, very complex.
Full Metal Panic Fumoffu- Always good for a laugh.
Paradise Kiss- Not as good as the manga IMO. However, compelling story, striking animation, a solid score, and great characters.
FLCL- Completely random series for those completely random days =p
Robotech- It's always nice to go back to the time when I was first introduced to anime(yes I know that Macross is the anime and Robotech is the american version )

I dont mind watching reruns of anime when they're on TV, but somehow, I just never feel up to watching most of my anime a second or third time etc..
However, I still did watch some of my anime multiple times.
Rurouni Kenshin - I watched at least 2 full runs, and at least three runs of the Kyoto arc. This is all excluding seeing them on TV.
The Melancholy of Suzumiya Haruhi - While I didn't watch this more than 1 full run, I did watch every episode at least twice.
Bleach - I've made 2 full runs at the nonfiller episodes, and more on some individual episodes.
Madlax - I really enjoy watching this series over once in a while. Made 2 and a half runs so far.

I´m not a big fan of re-watching anything because you already, well atleast should already know the main plot points. When knowing how a series ends, it just pretty much ruins the mystery and emotional punch of the show.
But like Stupidman said, I don´t mind re-watching if it is on TV. An episode a night is fine by me, but too many episodes and it just gets boring, specially those shows that tend to drag a little and only have you waiting for ¨the good parts¨.
The only series I have seen many times are Cowboy Bebop and Samurai Champloo. I haven´t seen the whole thing many times, but when I have 20 minutes to kill, I watch 1 episode of either of those 2 series.
So in conclusion, if all 26 episodes are linked, I tend not to re-watch. I´ve tried a couple of times to do this with Gungrave, RahXephon (after I got the movie I wanted to re-watch the series... I still haven´t seen the movie) and Evangelion, but never made it to the end.
Oh I forgot about movies. I tend to watch a movie if I am really bored or just need some background noice late at nights. Akira is probably the most played, Ghost in the Shell, Blood, FFVII, Cowboy Bebop, X, and a couple of others I can´t remember.

The only show I have rewatched so far is TM! OVA 1 and 2.
However, I've rewatched plenty of specific scenes in many many animes. Many of them quite a few times, probably lost count.
Air (too many to name, mostly in the near end part of the series)
Mai-HiME (Episode 20-25 mostly, 20 being the main one)
Mai-Otome (Spread out. I kind of like the filler episode scenes in this show for some odd reason. Probably attributed to Nina)
Elfen Lied (Episodes where Lucy's personality became more prominent)
Chrno Crusade (Part of ending scene. One of the best ending scenes ever)
Saikano (Too many to name... this can probably go under rewatched if I dont do skipping around method lol)
School Rumble (Oh man... lol the same as the above, for obviously different reason)
Azumanga (Same as above)
Nanoha (Mostly from second season, fight scenes)
etc etc etc

I watch a lot of Studio Ghibli films over and over again. I always see something new in them. My favorites include Totoro, Spirited Away and Whisper of the Heart.
For series, I just finished watching Gunslinger Girl again and I plan to rewatch Vision of Escaflowne soon.
I enjoy watching anime multiple times. The first time through, I concentrate on the subtitles and the plot. The second time through, I can better appreciate the artistry, movement and music, and maybe catch a few things happening in the background or by secondary characters that I missed the first time through.
