Are you asking which one you should bring from your list? Or one you should buy? From your list: Full Metal Alchemist. You should buy: Full metal panic.

I would recomend you find Tenchi muyo ova or Tenchi muyo universe. Also Full Metal Panic is really good and funny. You should check those 2 out.

If you like Cowboy Bebop, you might also like the director's latest work, Samurai Champloo. It has the same sort of "odd" fusion of setting and music, except instead of jazz/blues in space, it's hip-hop in samurai times. And if you like Miyazaki's films, make sure to check out his first film Nausicaa of the Valley of the Wind, which recently came out on DVD. Finally, if you're looking for an Eva-like TV show, Rahxephon is fairly similar, or you could try the series that was aired in direct contrast to Eva's seriousness on purpose, Martian Successor Nadesico.

Hope that helps you!
