Given how popular localizations of Grendizer are in various parts of the world, I'm honestly surprised it took this long to get a new one.

I’m intrigued, especially given Grendizer’s popularity, you would think it would have gotten a remake or sequel already.

I actually watched Mazinger Z: Infinity a couple of weeks ago on HBO Max and I found it weird that there were no references to Grendizer. Don't know if it's because Grendizer isn't as popular in its home country compared to Europe and the Middle East, but perhaps this project and the videogame that is being developed in France is a sign that Toei/Dynamic still remembers its popularity.
I also find it interesting that Grendizer isn't well known in Latin America, though perhaps that's because, unlike Mazinger Z and Great Mazinger, it didn't receive a complete dub, there's one dub where Koji's original voice actor, the late Jesús Barrero reprised his role, but it's a pretty obscure dub. I wish Toei would just redub Great Mazinger and Grendizer into Neutral Spanish just like they did with the original Mazinger Z a couple of years ago, the cast in that version also dubbed the Infinity movie and the OVA Mazinkaiser (which was just recently dubbed last year)

Associate director Nakano Yuu answered that: since there was no time in the movie to insert something relevant related to Grendizer, the team though that if they ever mentioned stuff from that title the audience would be disappointed when the Mecha didn't appear, so to avoid such case, they just decided not to mention it at all.

Very exciting news! I'm also surprised it took this long, since Grendizer seems to have the most faithful fanbase throughout the world. Obviously Mazinger Z is popular in many countries, but Grendizer was a huge hit in Arab speaking countries, Europe, and Japan. And all of these fans were super dedicated, making fan-films, dojinshi, fanclubs, etc.
Very excited for the new project, and hoping it'll be a TV series with a nice budget (unlike Cutie Honey Universe or Getter Robo Arc).
Also hope this means Discotek will license the original TV series.

That's disappointing but not surprising. I wish they coudl've at least referenced Grendizer to some capacity rather than just retconning the whole series. Infinity is still a pretty solid film and felt like a nice ending to the Mazinger storyline, so I can't really complain.
