Keeping up with when Pokémon learn and use moves in the anime is a fool's errand, but I imagine Hoenn hat Pikachu will have Iron Tail and Volt Tackle.

With two chances to receive Ash Cap Pikachu, it shouldn't be too hard setting aside some time to appear at its Special Event...
For those curious about each of an Ash Cap Pikachu's initial Level and their moves...
Original Cap Pikachu: Level 1
Hoenn Cap Pikachu: Level 6
Sinnoh Cap Pikachu: Level 10
Unova Cap Pikachu: Level 14
Kalos Cap Pikachu: Level 17
Alola Cap Pikachu: Level 20
Original Cap Pikachu uniquely has Agility. Sinnoh and Unova Pikachu share Volt Tackle while Electro Ball is shared by Kalos and Alola Pikachu. Every variant of Ash Cap Pikachu, except Original, has Iron Tail. All variants have Thunderbolt and Quick Attack.

The anime is pretty good at showcasing Pokemon learning moves, at least since Hoenn. Learning moves is often a recurring plot point for certain Pokemon.

They've also largely kept the 4 move standard of the games,with the exception of one-off and improv stuff the anime occasionally employs e.g Pikachu/Chimchar's Counter-Shield against Fantina. It's not too hard to keep up with what the cast's Pokemon know, since they usually make it clear what move was replaced quickly.
