So is the entire season going to focus on one game? Will it be 1-cour then?

^That game is rather long in the manga and there isn't actually that much material yet to do a competent two-cour, so it doesn't seem impossible, although it would be odd. Maybe the reason they rushed S3 was so the gap between the semi-finals and the finals wouldn't feel so long. I hope that doesn't mean they plan to end the anime there, I'll die if they don't do the Tokyo representative arc

I also can't imagine Haikyu!! as a one-cour show. Perhaps by fall the manga will have enough material to complete two cours with a small part of the arc you mentioned? Still, naming it the 'Karasuno vs. Shiratorizawa' season would be odd then, unless they change the title mid-way, or go split-cour?
I'm really really hoping Haikyu!! gets the Kuroko no Basuke treatment and get completely adapted (eventually, once it's finished maybe).

By the time Fall rolls around they surely would have enough material for two cours, but after that's finished they'd have to wait around two years to get enough material for more, and since the Tokyo Rep arc isn't over, it's uncertain how much longer it'll be and whether it'd have a good stopping point for the hypothetical second cour of S3. I'm honestly of the idea that S3 should've been pushed back to Spring 2017 and keep the series on an "every 18 months" schedule. Or they could've padded the Miyagi prelims more and push the Seijoh match to S3, but I know everyone's sick of hearing me complain about that
But yeah, I certainly hope this gets the Kurobas treatment of a full anime adaptation. The manga is amazing, but the anime team has done a brilliant job capturing all the beautiful character nuances and it'd be a waste not to see Karasuno's full journey animated, whatever that may be

No matter what, I think it would be unreasonable for the Karasuno/Shiritorizawa match to go longer than like 6-7 episodes even if it was really drawn out in the manga. Since we're on Nekoma/Nohebi right now, it isn't too far out there to hope that we'll get enough material to continue the show and not make a whole cour about the Shiritorizawa match I think.
Anyways, I'm thrilled that we're getting a third season so soon, but I was pretty surprised that they're making it in fall, I was pegging winter/spring at the earliest.

^Well, the Seijoh match was 4 episodes long and it took around 20 chapters in the manga, whilst the Shiratorizawa game was 50 chapters long, so the anime doing it in 8-10 episodes doesn't seem too much of a stretch. I'd rather they do that even if it may be exhausting than skipping over the many great character moments and little flashbacks, which is after all what makes Haikyuu so rich

Imo they cut too much out of the Seijoh match for my liking and now that I remember that the Shiritorizawa game was 50 chapters aka a point per chapter basically it doesn't seem too much of a stretch to make the match 10 episodes. Does that mean that the second cour would be most likely 2 episodes for Nekoma/Fukurodani and 2 episodes (or even 1) of the Nekoma/Nohebi match? And the rest is the prelude to the Spring Tournament? Just thinking about how much they have to fit into the 3rd season hurts my brain.

I fully agree that they cut out quite a bit from all the matches in the Miyagi prelims, they could've easily stretched them further (seriously I've bitched about this a lot, I really think they should've pushed the Seijoh match for S3). I hope they dedicate at least three episodes to Nekoma/Fukurodani, although the match was short in the manga , it wouldn't kill them to stretch it out a little bit (like they perfectly could've done with the Datekou game, damnit. Nekoma/Nohebi seems to be taking longer, it's been like 4 chapters and the first set isn't over? So maybe they can dedicate a bit more time to that one. After that I expect we'll get a little flash of Fukurodani vs Itachiyama, just to start hyping Sakusa as another rival that Karasuno will have to defeat eventually
If S3 is just one cour, they could do the Shiratorizawa match in 10 episodes and the remaining three spread them between the prelude and the aftermath (one and a half ep for each?)
