Okay, so I was watching last night's episode of Eureka 7 (episode 6) and I was wondering are those kids really all Eureka's or are they just kids who she's adopted or something? I missed a couple of episodes so forgive me if I'm just asking about something that can be easily answered. Also, what's up with that elephant joke on last night's episode? It's where Renton is in the washroom and then he just bolts out.

i could answer you in this very moment, but you will later discover your answer. Do not worry, those episodes you missed up did not tell anything about Eureka's kids. In another further episode they will say if they are or they are not there truely children.
About the elephant joke... ummm sorry, i don't know.
Keep seeing Eureka seven, it is a great anime!

Agreeing with dxx that you should continue watching the anime, and you can find out later on, but i'll spoiler tag it for you if you are really eager.
As for the elephant joke... can't help you
Eureka was actually in the Military SOF (a special forces unit) with Holland. This is how they met. She kills relentlessly without ever wondering why, just obeying orders, then one day she finds the 3 kids all crying under a pile of people she had killed. Her eyes widen and see what she's done etc....
If you continue reading its an even further spoiler to the part of around episode 40 or so.
The oldest, Maurice, still hasn't forgotten about his mother and still resents Eureka for killing her. Also, later on you see more footage of the scene where Maurice attacks Eureka after she finds them. Although it's not too important.. it's just something to know.
Keep watching this anime! It's a great anime, but hopefully it won't get massacred to pieces by CN or something.

Yeah, it's a common Japanese childhood joke to compare the unit to an elephant's trunk.
