I know it has 4OP/ED so does that equate to 4 seasons?

Depends on how you look at seasons. If you go strictly by Japanese television schedules, where the year is divided into four three-month seasons, then yes, Eureka Seven is four seasons long. But most anime fans regard a "season" as one continuous series of episodes, and only consider a show to have a second season when there's a new batch of episodes several months to a year or more after the first batch ended (for example, Full Metal Panic! and Full Metal Panic! The Second Raid being two separate seasons for airing separately from one another, when technically they're three seasons if you look at the episode count). By this definition, then it only has one "season," as it lacks any sequels.
