I started with saint seiya, then doraemon, then dragon ball, then.... 1001 other titles too many to mention.

What I have noticed through all of these titles I have skimmed and sometimes perused, is that my tastes have certainly changed. I will of course cherish the old titles that I once liked, but I find it harder and harder to like the same types of stories that I have read before.

I like originality in stories, and it is probably for this reason that currently my favorite type of stories, instead of being mecha, or magic, or sword fighting, or people with supernatural powers, is that one that concern ordinary humans living out ordinary human lives. A lot of these don't have points or morals in them, at least not in a contrived way where the story bends around a theme. I mean, if you are very strong with your hands, you can probably squeeze some meaning of these stories, but they are stories more enjoyable just as stories, meaning wasn't why I chose to like them. Some of these that I consider to be of this type are

Angel Densetsu
Bokko
Ii hito (although the theme got old after a while)
Koi Kaze
Living Game
Minto na Bokura
Aishiteruze Baby

How have your tastes changed?

Well, let me guess. You liked mangas made for young kids to read them when you were a young kid. Then, you turned a teen and started to like things more charged, more characters, stories, etc, but still without being mature enough (for your tastes) mangas. Then you've grown up and liked different genres.

That's normal...Completly normal...

Anyways. I used to like mangas with any really interesting plot of it. Which, I still can like them for their characters whatsoever. But actually, I prefer when the stories are "real", that allowing to include magic, while it won't be a lacking story. I could say, I can like a "less-than-an-adult-storyline-with-manga" (Less than an adult storyline with manga).
