For me it would have to be Witch Hunter Robin cause there's so much intricate and little details in every episode. Everytime I watch it there's always something new that I missed before and it just shows how everything about the anime all tied together so well in the end. (Well, maybe except for the ending. )
On a different level though, I really enjoy the style of drawing and mood to it. It's dark and suspenseful with a gothic flair to it. I only watch my anime on t.v. so it's rare that I get to see an anime of this type.

The first anime that comes to mind is Fullmetal Alchemist. I'm currently watching it a second time, and it goes from being a great series to a classic series. A second time allows for picking up on the mini stories or hints at things to come, which allows me to really respect the amount of detail and care that went into this series' storyline.
There are plenty of other anime that is worth watching a second time, but Fullmetal Alchemist is definitely one I think should be watched (at least) twice, because it's far more gratifying a second time.

I got kind of bored with WHR personally =P I liked it, enough, but thought they could've done more.
Anyway, I just rewatched Samurai Champloo while showing a friend it for the first time, awesome. I like it more now than I ever have. I have a very good memory for things I've read/seen so when it's an episodic show, Champloo or Bebop for example, I don't have such a good memory of it. I get to see a lot of things that I've forgotten. The animation is amazing(not to mention, the characters don't look like the normal anime character in every other series!), I love the music and some of the episodes/2 ep arcs really bring together a great mix of artistry. It's just so much more than it first seems. I could watch this again in another two weeks.

Hmm I'd have to say Neon Genesis Evangelion since there's so many little details that you have to watch a few times to really understand. The fight scenes are also fun to watch. FLCL is not one of my favorites but I think you have to watch it more than once to actually get something out of it (and often times people appreciate it more the second or third time around). One I really watched over and over is Beck, even though the story isn't really too interesting a second time around. The feel-good parts are fun to watch though (like Koyuki and Maho singing) and some other scenes. One last one is Azumanga Daioh, which is still fun and cute even if you watch it more than once.

The main reason I'd watch a series again is because it was insanely deep and confusing and needs to be watched a second time. However, a good reason would be because you love a series so much. Now, I know I probably won't watch and entire seriest twice, but I have watched certain episodes of Azumanga Daioh and His and Her Circumstances a few times.
Anyway, I think the only series I'd watch more than once so far is Noir although I've only viewed the first 5 volumes, because it needs a lot of focus, and is extremley confusing.
The Same with the best series of all time, Haibane Renmei (AzuDai is the runner up,well sort of:) although I have yet to see the last volume and have only rented it, I would love to see it again because it is such a groundbreaking visual and story-based masterpiece.

I have to say Witch Hunter Robin as well. I really like the relationship between the characters.
I also have to nominate RahXephon. I think that you have to watch this one 2 or 3 times to really understand it. It's a bit confusing the first time you watch it but it isn't as bad as Eva!
I also have to say Fruits Basket as well. This develops the characters as well. But I have to admit the deviousness of some of the characters (Shigure!) shows up better in the manga. (I really have to wonder what Shigure's goal is with Tohru and the Sohma curse.)

Non-linear shows are the best for rewatching. The first time I watched the Boogiepop Phantom episodes I was lost and confused. Right after watching the series I rewatched the entire series with the great audio commentary on. After that I rewatched the entire series a third time and it made a good amount of sense. I ended watching the series again about a year later after watching the live action prequel. The first episode of Berserk and Gungrave are also a must watch after completing the series. They make so much more sense the second time around.

I think most animes have something in them to deserve a second watch (though my personal opinion on Madlax diverges from StupidMan007's--that's one of the few shows I don't want to re-watch). Aside from the ones listed, most shows with complicated/confusing plots are worth a rewatch, since you'll see things that you missed the first time or that make more sense after seeing the whole series. Even Mai Otome has a few scenes from the first episode that make much more sense after seeing just though episode 19. Scrapped Princess is another good one--there's lots of minor plot points and visuals to pay attention to, and even the very beginning of the first episode has a very different meaning if you've seen the end. The series opens with a downward track shot that shows a bunch of little triangles above the land, which you see "opening" in episode 24.
Also, it depends on whether you're the kind of person that can easily relive emotions, or if you feel like "Well, I've seen that [sad scene/death/etc.] once, I'm not going to feel like that again." The latter group won't see as much rewatch value in some of the sad/dramatic series that come up in the "Saddest Scenes/Make you Cry" posts.

Spirited Away- I've seen this movie 9 times by now(I just watched it this weekend, in fact), and I'm still not sick of it! It's my fave movie, and I use it as an intro to anime for my non-otaku friends.
FMA- My favorite series. I saw the whole thing fansubbed, and now I'm watching it end on AS. And I can't wait for the movie!
AzuManga Daioh- After seeing the whole series on AN, I bought the box set. I like rewatching a few episodes when I'm down in the dumps, since it always cheers me up!

I won't go into all the titles on my self nor the number of times I've watched them. I spend a decent amount of money every year to buy anime, box sets mostly. Why. Because I intend to rewatch them; in purpituity. Chances are, if I enjoyed it, I'll watch it again, a minimum of once. That's the way I'm wired.

I think the anime I've watched through the most times would be Excel Saga, 6 times through I think. I watch parody animes through at least 3 times. Once to just enjoy it, another time to pick up and find all of the references, and one more time to see the jokes that were changed in the dub. Most other series I watch through twice. Once subbed and the next time dubbed. Unless I really hated the series (i.e. Mouse) or if it's only available on fansubs.

AMEN! I've seen Samurai Champloo 12 times now, i really love the show. Also great mention on the art; it's very unique and original. I love the way the characters have that long, tall, lanky look to them; really great. The music, is great. +10 for battlecry, one of the only rap songs i can tolerate! Same deal with FLCL, although since i saw that a while back now i forgot how many times i've seen it, but it's enough to script out every word and episode pretty damn good (sad huh?). Both these have superior art, intreresting storylines (or lack thereof!) and really fun characters. Highly reccomended. The fights in Champloo are also amazing and engrossing (especially some of the greats, like the fight between mugen and jin in episode one, followed up by that great courtyard fight against the army!) and it just got better from there too!
Chrono Crusade was so perfect, that i watch it every chance i get, however i tend yo avoid the end if i watch start to finish for some reason (those who have seen it will know why...) however, that's not to fault the ending; it was perfect, wrapped things up with 100% no loose threads, and made you VERY SAD
Also, i atch Elfen Lied over and over, because
1) much as i used to be, friends of mine that wish to try anime out are also gore+blood fanatics, so what better to show them than this? nudity and bottomless pools of blood...needless to say they love it. and so do i (though i've come to appreciate it for much better reasons!)
2) i still feel bad for nyuu

The one series that I find myself repeatedly returning to would be Beck: Mongolian Chop squad. The music alone was enough to bring you for a second time, the characters themselves were intriguing and special enough to want to see them and the way they interacted with each other again, and chain of events that occured had to be seen again and again just so I can see exactly how everything went down from Ryuuske's abduction to the Greatful Sound miracle. It was something that I had to go back for again and again, and I'll be going back to it again when I pick up playing guitar again next semester.

I wonder if we can make Azumanga the most mentioned show on this thread. There is something about the humor that works over and over again. You don't have to watch the entire series in order to enjoy it again. I sometimes will sit down and watch all of a themed epidsiodes like the Sports Day, or Chiyo's Summer episodes. This series is definately worth owning based off of replay value.

2x2=Shinobuden. I've watched it 3 times now, since it's just so funny. I've watched Excel Saga twice, simply because it's just hilarious and very entertaining. However, I probably won't watch them for a much longer time now.
I've seen Furi Kuri 6 times, which is the most times i've watched any anime series. I didn't get much out of it the first time I watched it, because I was so confused as to what was going on. However, when I watched it a second time I understood it a lot more, and even more the time after that. I recently just watched it again, and each time I do I get something new out of it.
I've seen both Trigun and Cowboy Bebop twice, simply because the first time I watched them was on AS, CN...and the second time was in Japanese.
Other than that I don't think I've watched any other series more than once...probably because I always have something new to watch when I'm done with something.
However, I do plan to watch Naruto over again when it's finally finished...someday.
