Yeah, leechy kind of title that I've come to despise from the anime board but after browsing the other manga recommendation threads I feel the need to make my own.
Anyway, I haven't read much manga yet but here's my list so far (in bold) as well as my current prospects(in italics):
Death Note (everything up to current aside from volume 2 for some strange reason)
Mushishi
Wild Adapter
Bus Gamer
Genshiken
Blade of the Immortal
Vagabond
Berserk
Tenjho Tenge
Hunter x Hunter
Twelve Kingdoms (I think it's technically a novel but it has an anime counter-part so it fits here in my opinion
So thats what I've got so far. I'm also a pretty avid anime watcher and I've seen or am following most of the main popular anime such as Naruto (Shippuuden), Bleach, and One Piece. I've also seen Monster, School Rumble and Full Metal Alchemist and am thus not particularly enthused to buy the manga versions despite any potential differences.
I'm open to a very wide variety of manga genres so don't worry about bringing up a rather obscure, strange, or eclectic manga. Part of my reason to make this topic is so that I can tap into some somewhat overlooked series and not simply hop onto the Naruto/One Piece/Bleach bandwagon (as I've said, I'm on the anime version bandwagon already). I like shows such as FLCL (though my first attempt to watch it failed horribly I came back to it and loved it), Haibane Renmei, Twelve Kingdoms (favorite anime of all time), and even things like Akagi and Eyeshield 21 so I've gone knee-deep in most genres of anime and am not adversed to doing the same with manga so thanks in advance for any help I get.

If you don't mind scanlation or if you can read Japanese or French or Spanish or German or Italian then you got to check Gantz, it is absolutely awesome (my favorite manga ever). Continuing with dark tones I'd say GUNNM (Or Battle Angel Alita like it's call in English) and it's sequel GUNNM: Last Order, those two are awesome.
For a cute action filled ride, I'd recommend Et Cetera witch also as a fantastic art style. In the strange department, Midori's Days might fit (don't even think of watching the anime for this one if you want to get the whole story).
Lastly, I'd recommend one of my current fave; Hayate the Combat Butler (really, really funny).

You might want to check out Samurai Deeper Kyo, Bleach, and
Kami Kaze. They are all great action titles that fit well with your
collection so far. All of the titles are really great, and if you also
dont mind scanlations check out Ichigo 100%, i think that you
might also like that. Have fun

I recommend you stick with the plan of attack you have listed there and start picking up Blade of the Immortal. Samura's samurai series is easily the best action series listed on this thread: there's tons of history that informs the book without making it bland and textbook-y, the art is just effin' killer (especially on the action sequences), and the interaction between the characters sucks you in completely. One of my favorites.

Sounds like my prospects are good then and I'll take any suggestions under advisement and do some research into them. I just went out and got Twelve Kingdoms and the first book of Kino no Tabi (didn't know about it till pretty recently).
I'm gonna start off with Blade of the Immortal since I really want to try it out and was pretty much just waiting for someone to say something about it so I can say that it was recommended to me
Unfortunately I have to order it online since my local Chapters doesn't carry it in-store but has the entire series (and many others) available online and the shipping 4 bucks for next-day delivery (being based in Canada and all) so it beats out most site I see listed.

The Kino no Tabi book series is absolutely incredible.
I'd also recommend Berserk to you. Blade of the Immortal kicks ass and takes names, and if you like it, definitely check out Berserk. They're similar, yet not at the same time. Both have incredible artwork and amazing stories. As long as you don't mind really graphic violence or sex, then they are both incredible.
