Guess they couldn't get a good schedule down in the end.

I thought it was due to the Olympics, but apparently no. Hopefully not a sign of (more) bad things to come.

What is going on? First This, then Shoshimin. Both taking the same week off

Shoshimin is because of the Olympics. Wistoria's case is unknown.

The first delay of the season related to production issues, within the first month, that has to set a record, right?

Not really, I can think of some like Regalia: The Three Sacred Stars and Long Riders but that's very rare indeed. However, given that all the announced delayed animes air on Sunday ( japanese time ) a very bussy day during Olympics, I'm willing to bet that this is all because of the that.

I doubt it is due to the Olympics. It airs on AT-X initially on Sunday nights and then BS4 late on Tuesday night. AT-X only airs anime, and a secondary airing on additional stations/channels doesn't cause scheduling conflicts.

e: BS4 seems to only be delaying Augusts broadcasts by ~5 minutes.

The record on production issue delays is Ufotable's God Eater adaptation
It got it's premiere itself delayed a week from what was originally announced, and then had several delays during airing to the point that the last few episodes could only air in a reairing of the whole show a couple seasons later

Would be interesting if they subbed and released the special here, but it's doubtful. Extra material and content always adds variety and behind the scenes looks in the production, but here's hoping this is not a sign of issues.
