Lately I've been seeing many new anime protagonists getting the chibe form treatment, Is this a new trend?

Chibi form is not new, it is existed since long time already..
Just look at SD Gundam

I know it has existed for a long time but I have rarely seen this many completely different animes having the characters in chibe form.

Just to list some
Ika-musume, Puchim@s and recent anime Himouto Umaru-chan have chibi form characters
and even awesome anime Overlord got chibi treatment too
