I wouldn't be surprised if the intent is just to do more fanservice as this has happened with a few other harem shows like Aesthetica and Freezing.

I don't quite get it, is the author writing a side-story for each volume, or only 1 side-story, which each OVA will animate small part of?

Each volumes Limited Edition is going to come with part of the story. It'll be 32 pages long, but it will be released installments with mini OVAs that tie into the side story.
Could be wrong there, but that is how I interpreted things.

I guess it depends on how much ecchi scenes the author will puts into the side story?

Though I don't really read LN besides skimming through them, are the anime/manga adaptations have more fanservice/raunchy material than the LN?
