Please be more specific. Tell us what you think is a "good plot" or at least tell everyone what kind of genres you like; fantasy, mystery, shounen, shoujo, supernatural, mecha, or whatever.

And if you list the anime you've seen, please also tell us some short comments (about 2 or 3 sentences) on what you thought about the plot. That way, it might be easier for everyone to recommend something. And remember to use spoiler tags. Thanks.

Immersive plots with twists...

As a bit on the darker side that I know of, try Texhnolyze and Monster. Texhnolyze being very gritty with an apocalypse feel to it. The main character is almost a vehicle to see the plot.

I haven't seen Monster but I've heard the plot and development of the series is incredibly strong. It's definitely on my list as a longer but more mature anime to watch.

The forums value personal input rather than hundreds of probing questions without anything else to go along with them. If you want suggestions, it's much easier to get them by listing other anime you have watched, liked and why.

Neon Genesis Evangelion and Rahxephon both have intresting plots with plenty of plot twists. And they'll both make you "think".
