A few of my friends and I are pretty avid karaoke singers and I've been wanting to bust out some anime stuff whenever we go out, but can't for the life of me find anyone that makes or sells karaoke cds with anime themes. I was wondering if anyone knows of any company that sells these, or if they even exist.

I don't know about dedicated karaoke CDs, but 99% of anime singles will include karaoke tracks, usually called "instrumentals" or "off vocals". If the songs you want are from relatively recent and well-known anime, you shouldn't have any problems finding them.
The Malata karaoke machines which Chinese like buying now contain a page of Jpop songs. Notables include:
-Zankoku na Tenshi no Theses (Evangelion)
-INVOKE (Gundam SEED)
-Every Heart (Inuyasha)
I think there's Planetarium by Ai Otsuka, I don't remember.
Of course, god knows what script the lyrics would show up in. It could be Japanese (kanji, hiragana, katanaka), or Chinese (just "kanji"), or maybe English if you're lucky(?).
note that a page is not a lot, considering there are 2 books of songs. Also note that the new machines dumped the entire library of English songs (in the order of 10-20 pages) and replaced them with a completely different (newer) set of songs. So if you've heard of Malata before, know that the new machines are missing many old English songs.

Touhou Spell Carnival is a unique blend of strategy and shmup gameplay with ample amounts of charm and depth.― This was my first exposure to the Touhou… franchise? Expanded universe? Mass hysteria? Other than knowing it was a bullet-hell shmup series featuring ...
