I know that Lucas, Linkin Park, Courtney, and Quentin Terrentino are fans. Are there any other celebrities who like anime?

From my understanding, Geddy Lee, Alex Lifeson, and Neil Peart (the three members of Rush) are all anime fans - particularly Robotech.

I heard once that Geena Davis once was considering producing a live action Sailor Moon movie.
Kirsten Dunst has admited to liking Sailor Moon. No Doubt's music video ex-girlfriend was based off Kite, so someone in the band had to of see Kite to get the idea to use it. Rivers from the band Weezer has anime stickers all over one of his guitars. |

Well, it's typical that Japanese bands do songs for anime op/ed themes. It's a whole different story when anime music's done by an American band. |
