I'm a little confused, the plot says they're brother and sister but the article also says they're sisters.

Another series they are in together. Not the 1st time sisters (brothers or twins) have voiced twin characters. I'd name a few or the title but it'd be spoilers.
As for the plot... I'll need to see a trailer first.

On top of that, the synopsis (in need of editing in general) also says "Takumi discovers what appears to be twin young boys and girls" which sounds like multiple sets of twins. But judging by the promo art, it's likely just a single pair of twins: a boy and a girl.

Since isekai is here to stay, does anyone knows of some with weird, or interesting gimmicks like that vending machine, or Isekai Shokudo that haven't yet been animated?

How many times are isekai haters going to say "Isekai is here to stay"? I've heard that term many times and it's bothered me for so long. I'm not even a fan to isekai, I'm indifferent to it. That term just annoys me.

I can't talk about other people, but I enjoyed almost every isekai that I watched / read, and I have absolutely nothing against the fact that we are in this era, especially considering how much I love classic RPG settings.
I do wish personally there were more remakes though, like classic Yugioh!, Claymore, Saint Seiya but proper, GTO, Umineko, the full adaptation of Yokohama Kaidashi Kikou, modern adaptation of Dragon Ball manga, Soul Eater, etc...
Please, don't @me with "Remakes are unnecessary.", I don't care about their necessity; that's just my personal wish that will never actually be granted.

For those wondering, Allen and Elena are boy and girl respectively.

The Ideal Sponger Life?
The gimmick here is that... there is no gimmick, the guy decides to get isekaied by his own will after a queen from another world proposes a marriage by convenience, one can perfectly argue the real MC is the wife.
Its, most probably, the most realistic isekai there is, seeing how isekai always try to look for a gimmick and try to be the biggest possible power fantasy, finding one that tries as much as it can to make a realistic scenario its, ironically, original and gimmickry in its own way.
Psyren its also, technically, an isekai, it got axed, but it ran for over 100 chapters so the author had chance to make a decent ending.

Think whoever dubs this in English will find real twins to voice the characters too? Either brother and sister or two sisters with one a gruffy voice? Don't have to be identical, just fraternal's enough.

That's cool that they're getting to play actual siblings! With the different last names, I'm guessing one is using their family name while the other their mothers' maiden name? Or just a pseudonym?

I remember the Rial sisters (Monica and Natalie) playing twins in Kageki Shojo.

That's actually a ptetty good idea. Monica's played a bevy of roles and has proven able to voice male roles as well. Didn't even know she had a sister though, much less one in the voice acting game as well.
Christ, the age difference between the two...

Lots.
There is an Isekai where the only difference is that the hikikomorii mc in the other world exists as well... And he is a girl in that one. They keep on checking differences between their world and find some really minor ones , like the dad being bald in one world. Then as a pair of losers they fall in love with each other and that is not even the weirdest thing, in the end male (pov) moves to females world and as it ends we discover that her world has monsters and magic.
That's just an example, so yes, there are a lot of gimmicks still unused.

It's not THAT big, about twenty years. Natalie has had a few high profile roles since her debut in 2013:
Shenhua in Shenmue
Momo in To-Love Ru
Kana in Oshi No Ko
Nazuna in Call of the Night
