Cowboy Bebop. And stay away from anything dubbed that has the 4Kids name on it. Also don't watch dubs on TV if you want to stay away from bad dubs.

Spirited Away, Princess Mononoke, Fooly Cooly, Cowboy Bebop, Outlaw Star, Tenchi Muyo, and some others that i can't think of right now were all dubbed very well.

All the UC Gundam OVAs (0080, 0083, 08th MS), Gunsmith Cats, Tenchi Muyo!, SoulTaker, Trigun, Big O, Excel Saga, Gasaraki, Inu-Yasha (sort of), Mobile Suit Gundam (Char's Counterattack included), Gundam Wing (Endless Waltz included), FLCL, Gatekeepers 21, Golden Boy, Hellsing, Jin-Roh, Mononoke Hime, G Gundam, and Outlaw Star all had good dubbing, in my opinion.

Many peole actually go as far as to say that the Trigun dub is better than the sub. So in fact, sometimes, dubs can be better. Most people don't notice that however due to the fact that they can't understand Japanese well enough to know when the seiyuu just plain suck.

From my experience, the good dubs are X TV, Your Under Arrest, FLCL, Cowboy Bebop, Spirited Away, and probably Full Metal Panic.

I've noticed with a lot of people it depends on which version they hear first. But some animes just don't work when they are dubbed due to bad casting. Photon, for example, is baddly dubbed because the main character (Photon) sounds like he's 20 dispite the fact that he is obviously just a young kid.
Also, one thing that makes the original Japanese dialouge sound better is because most of the characters have a happier "cuter" sounding voice. All too often dubs just seem to have voices with too much of a serious "grown-up" tone (see Photon example above.)

I rather enjoyed the Hellsing dub... guiltily, I might add...
Cowboy Bebop has and excellent dub. As does Big O and Trigun.
Usually, the worst dubs (for me) are when there is a character who speaks in Oosakaben. I absolutely hate it when they use an American southern accent for it...

Whether or not a dub is good or bad depends on your own tastes. Often there is a general consensus over the quality of a dub, but that's not always a guarantee. Liking or hating a dub depends on several factors, including: your level of acceptance toward acting skill, feelings toward certain voice-actors, tolerance toward loose script adaptations, how much you like the Japanese voices and how much you compare the two voice tracks, etc.
Even the best dubs aren't liked by some people. I've heard some people say they hate the dubs of "Cowboy Bebop", "FLCL", "Hellsing", "Trigun" and others, even though a majority of people will praise these dubs through the roof.
So what exactly am I saying? Just that you and only you can decide what dubs you enjoy; everyone else can only give recommendations.

Double thread, so I'm posting in this one as well:

Yeah, I know this sounds a little silly, but really, anything I recommend will...oh, hell, forget it. Here are some dubs I like:
- SoulTaker
- Noir
- Project Arms

Dubs are not "always" bad. Blue Gender and Fruit Basket were done well, to Funi's credit. I personally enjoyed Excel Saga's dub, as well as Trigun and Cowboy Bebop.

IMO most dubs are good than bad. I can think of more good ones than bad.
The "dubs are always bad" is an overrated phrase.
