Well, a chef who cooks with large amounts of meat as often as Nikumi does would have to watch out for flying bits of hot oil and fat and boiling water, which can easily burn. That's part of why chefs are usually covered everywhere except their heads and hands.

But this is anime, where women run around half-naked in Antarctica. Burning bits of liquid won't get in her way.

Fixed that for you. The uniform is not always the most comfortable thing to wear, but it is essential for personal safety and hygiene. The fabric is usually heavy, so it can be a barrier for spills, splats, and hot objects. There is cover for the head, as well - it doesn't cover the whole head, but when working you will normally see a chef wearing some kind of hat. It has three functions: control the hair, control sweat, and protect the top of the head from accident from above.

If not a chefs coat then some kind of shirt and pants. Any fabric is better than bare skin, as long as it's cotton or wool. Synthetic fabrics can hurt you, bad.

Having said all that, this is anime, as you say, and the hazards of a real kitchen would spoil the fun. So it's probably best to leave it out.
