I'll admit, console racing games undeniably have the graphical edge over most PC offerings.
However, when comparing the realism of anything on a console (including Gran Turismo and other franchise games) with PC simulators such as iRacing, rFactor or GTR, even the most punishing settings of the former category take more liberties when modelling the mechanics of motorsport. This simulator features a free demo and is relatively easygoing on system resources. I'd recommend giving it a spin if you want to feel the difference.
Of course, console racers need their wide appeal, so to employ as much realism as is possible would probably hinder the success of such games.
