One of the main things that have determined whether or not I buy a DVD in the past has been the inclusion of commentary.
Recently I watched Puni Puni Poemy and Princess Tutu ( U.S. Releases) and greatly enjoyed the VA commentary on them.
Does anyone know any other series that include va commentaries?

English audio commentaries have been regular features on Le Chevalier d'Eon (some volumes have had them for two episodes!) and Ah! My Goddess: Flight of Fancy (the 2nd season), with the first season of AMG having them on at least one or two volumes IIRC. The last volume of Kodocha also had one (although that wasn't the norm for the series), and the Neon Genesis Evangelion movies have probably the most insightful and informative English audio commentaries you'll ever listen to in anime.
Based on extensive experience with American DVD releases, ADV is far more likely to have an English audio commentary on a DVD than any other American company, though it's not a regular feature even for them.

some of the ones on the top of my head. beck, black lagoon LE, ninja scroll tv. im gonna have to admit i never use to look for those things but now any extra i can find entertains me greatly. aside from before i use to skip the extras and just watch the shows. i especially like it when they interview the voice actors. they always end up making things funny

I know of commentary on disks of Negima!, Maburaho, Saiyuki: Requiem(the movie) and Slayers: Premium.
I enjoyed the Saiyuki one the most (of course!)

Burst Angel has one commentary per disc, and a hidden commentary for the beach resort episode. Appropriately, they are far from serious, and very enjoyable.
I didn't make it all the way through the any of the Negima! and Ah! My Godess! commentaries because they (almost) never had anything to do with the episodes and were more like generic cast interviews, but with background noise and video. The ones from Chevalier were more interesting as they generally had conversation topics relevant to the show in general at least, but they stuff like 8 into the first three discs (FOUR COMMENTARIES ON DISC 3!), and I stopped watching them because I want to finish the rest of the series first before rewatching so much of the series.

I noticed that voice actor commentaries were a common bonus feature on ADV releases as well. I believe Peacemaker Kurogane included commentaries on nearly every DVD and much of it was epsiode commentaries rather than individual interviews. It was always entertaining to listen to the voice actor's comments on the characters and the episodes!

Some of the earlier volumes of Kodocha had commentary, though they did stop doing it after a few discs and only brought it back for the "last" volume. Some other Funimation releases with commentary include the last volume of Gunslinger Girl and volumes 2 & 5 of Suzuka.
Like Key says, ADV are the Kings of Kommentary, although with the recent hard times they've been cutting back. These are some other releases that I know to have commentary on at least one episode:
Abenobashi, vols. 1 & 4
Angelic Layer, every volume (I recommend the David Williams / Mariela Ortiz commentary on V5)
D.N. Angel, every volume (especially the "totally Tiff-eriffic" commentary from Tiffany Grant & Tiffany Terell on V4)
Devil Hunter Yohko -- with this being ADV's first release, they elected to do a "historical" commentary, which is pretty cool.
Princess Tutu -- VA commentary on Vols. 1,3,5, & 6, staff commentary on 2 & 4.
To counteract this mostly list post, I will "comment" that I'll take staff commentary over VA commentary any day. VA commentary isn't bad per se, but due to the nature of VA preparation for a series (see the current thread), VA commentary generally consists of:
33% "I've never actually seen this episode and I know nothing about the series, so here's some talk about other shows I've done and my acting career outside of voice acting."
33% "Whoa! Look at that! What is with that hair? Oh, that's [other actor]'s character, I remember this one time, at band camp this one convention where we..."
33% [comments relevant to their characters and the series itself]
All that can be fun, but it's much more enlightening / fulfilling to get commentary from the director, producer, translator, or scriptwriter because they know the whole series and can offer more informed insights on whatever episode they're talking about.

Hellsing Ultimate has a commentary track with Crispin Freeman and The Director (don't know the name
I know the last Fruits Basket dvd has a feature where all the english VAs are talking, but it's not like a commentary track.

I can verify that this is true. And it's not just on a few episodes or added on the disc as a separate extra, but is a full commentary track with staff members on every single episode from start to finish that is available to be selected as an audio track. I suppose YMMV, but I found it to be quite interesting.

See, I wish all commentary were like that, available as a selectable audio track along with the main audio track(s) in the episodes. And you'd think companies would do that since it's most efficient space-wise...but Funimation always has its commentaries as completely separate extras. It's obviously a waste of space to have the same video for episode 13 or whatever twice on the disc, once with Japanese & English audio and again with commentary. Yet that's what Funi does, which is a pain because I like to turn the subtitles on so I can read through the episode while listening to the commentary. But of course these isolated commentary extras lack subtitles

Not only do they all have commentary, but the commentary is really good. On it they describe the relation of the novels to the series, and who all these other characters like Spooky Electric are. They point out some neat subtle moments that you can miss like how the cream forms a Yin Yang symbol in the cup. The commentary also explains the nature of Echos and many other mysteries in this confusing series.

There was one mistake on the Boogiepop Phantom commentary that really bugged me mind (I think there were one or two errors, but only the one sticks in my mind).
The best commentary I've ever heard was the first I ever heard, on the Eva movie discs. The worst is probably one of the D.N.Angel tracks were they stuck two guys in the booth together and they seemed really unconfortable. Tip: all commenaries should have at least one female. Monica is a safe bet.
I recently re-listened to the Uta Kata seiyuu commentaries (in Japanese.. couldn't understand much beyong "mada pantsu ga!"..) and they are just nuts... two hyper Japanese girls in a room with a DVD and food.
