Well since everyone has been bashing some of the intros and outros, I figured that it would be nice to hear which ones people like.
Truthfully, there are too many that I like, but one of my favorites is the ending to "Jungle Wa Itsumo Hale Nochi Guu Deluxe". It's just as weird and strange as the anime is ^_~. Plus i love that anime SOOO much.

I think there's already been a thread of this, but oh well, it's up for the ops to decide.
Are we talking about the music, or the music with animation. The following I did based off music and animation.

Hmmm, I believe there are a few intros that I like very much, but for mostly for different reasons.
High Energy:
Outlaw Star’s intro kicks serious butt, and I don’t understand a word they say in it. It’s “outro” isn’t as good in my opinion, but my kids wont EVEN let me get away with watching Outlaw Star without also watching the intro again, and again, and again, and…well you get the idea. Nothing quite like a three year old dancing with her dad in the living room to an anime intro.
Style:
For my money nothing beats Cowboy Bebop. It’s like remembering with I used to turn on the television back in the late seventies or very early eighties and see the openings to some of those old shows…only better. Bebop has a good musical soundtrack throughout, and the opening is no exception.
No words:
Ok…not the best intro…but I love listening to the opening for Photon.
Best Music:
Record of Lodoss War (TV series). Not a bad intro overall, but the music (that I don’t understand a word of…again) is just consuming. It makes you feel what you should be feeling as different images come across the screen. Really, very good.
There are others…for other reasons, but maybe this will give you an idea of why I can’t just pick one.

I think the last thread on this topic was some while ago, so it's better just start a new one anyway.
Now, to the subject on hand, overfall the best intro I've seen has got to be Lain. Who doesn't love Duvet? And the animation is just superb, doing a great job of capturing the loneliness and isolation felt by Lain. For a completely different selection, how about Card Captor Sakura? The opening provides a fun (and sugary) start to each episode.
Actually the more I think about it, there are more good endings then there are openings. For sheer get-stuck-in-your-head factor, I have to mention the closing to Kare Kano. In fact, I'm humming it right now (must stay focused, must stay focused). Another good one is the outro to Please Save my Earth, that ending has a hauntingly beautiful quality about it.
Lastly, I really dig the third ending of Inuyasha, of course Dearest was always my favorite song from OST 2.

Hehe, I did kinda mention a lot... Anyway, the Ai Yori Aoshi OP is called "Towa no Hana." I'd have probably listed it, but I've only heard the song, and not seen the accompanying intro video. The Gundam X one is called "Dreams."
The first Inu-Yasha ED is "My Will," and you probably know this, but "Deep Forest" is the English translation of "Fukai Mori."
I forgot to mention the Gundam Wing Endless Waltz themes. Bad me.

The intro for King of Bandit Jing was pretty cool. I really liked the music and stuff. Another good one was Big O. To quote a friend of mine, "This intro was made by potheads". My favorite outro would have to be Furi Kuri (FLCL).

Heh, admitedly I usually skip the opennings and endings.
I guess that's why most memorable ones were from back in my VHS days.

I watched the entire series of Neon Genesis Evangelion and both of the movies in one sitting never skipped the songs. Ofcourse I can't stop singing eather one now...
