I've enjoyed two of these recently, one being Dai-guard which mocks salaryman life as well as Mecha. Another is Shrine of the Morning Mist that pokes a lot of fun at Magical girls in way that's very cute and fun.
Do any suggestions of others?

That depends on whether or not you are talking parody or just a regular run of the mill series.
If it's a matter of parodying, you always have Abenobashi and Excel Saga.
If it's not - there are plenty of others out there. Naure no Sekai also tackles the magical girl genre a bit.

I have never actually seen any shows that specifically target anime conventions. I have seen shows that target the anime viewer, like Nadesico (GEKIGANGER ROCKS!!), World of Narue, and otaku no video. There a lot more out there I just can’t think of them…

Comic Party, Hanaukyo Maid Team, Otaku no Video, Narue no Sekai, Midori no Hibi, Excel Saga, Dokkoida, Nadesico, GTO, Nurse Witch Komugi and probably dozens more...I know these aren't convention specific, but they all poke fun at (read celebrate) fandom. Please point out all the things I missed.

How about the snappily-titled Yukikaze spinoff, Sentou Yousei Shoujo Tasukete! Mave-chan? That's set in an anime convention.
