Well personally I would start at the beginning, SDF Macross.
If you can find it then get the movie Macross: Do You Remember Love. Then Macross Plus, and maybe Macross 2, which is an "alternate universe" story.

Of course the other ones you can't legally watch in the USA yet, since the licencing issues are so tangled all to heck.

I think it varies a bit from person to person, but if you're completely new to the Macross universe, I'd recommend:

Do You Remember Love? - You can watch either this or the original TV series to get the same basic premise and foundation for the Macross universe. I usually recommend DYRL over the TV show to newbies since it's shorter (you can jump right into the sequels quicker) and the art is much, much better.

Macross Plus - This one takes place 28 years after the original--it's more of a self-contained side story than an integral part of Macross continuity, but it's also probably the best Macross incarnation in the franchise. It's my personal favorite, at least.

Macross 7 - Takes place 35 years after the original. Macross fans have mixed feelings about this series, but I find it a lot of fun.

Macross Zero - This one is actually a prequel (it takes place one year before the events of the original), so it doesn't really matter when you watch it. But if you want to get 100% of the references in Frontier, you should watch this before you watch Frontier.

Macross Frontier - The most recent Macross series, it takes place 47 years after the original.

Then, if you decide you want to see more, you can go back and watch the original if you skipped it the first time and then maybe Macross II. (It's not very good, though.)

This question crops up so often, and is so easily answered, I reckon we should have a stickied thread for it. Hah.

Also watching Flashback 2012 after finishing DYRL and the original series. To be honest, you need to see all three of these because Macross continuity pulls from each. Retconned designs and some plot comes from DYRL, but most of the story comes from SDF. Flashback goes kinda between them, but the main importance is the Megaroad 01 launching at the end.
