Orange and red isn't all that common and green doesn't see a whole lot of use, but really there isn't any one color that seems unused. Pretty much any color I can think of I can think of at least a few instances I've seen it used. White's and grays see a good deal of use on older characters and villains, but not too often on main characters and good guys unless they're the old advisor character type of good guy.

really? i see white hair a lot on the young bishounen-y type guys... or maybe it's hard to tell on black and white manga =_= (i did not know Kanmuri from yakitate!! japan had.. bubble pink hair until the colored pages...i just imagined him blonde)
I don't see alot of really bright and vibrant colors.. i see mostly earty or pastel colors.. but it mostly depends on the mood of the series..(and it's color pallate)
like i would doubt seeing a bright lime green hairdo on a show like paranoia agent

You mean, like Olive Green?
That's pretty rare.
I'd have to make a sweeping statement and say that any color prefixed by "natural" seems out of place in anime.

Two-tone colors and highlights seem to be underused.

I've seen my share of peach-colored, but it is rare.
Ugly colors are rare colors. Like Snot green, mustardy greenish yellow....ewwww.
And White hair that's actually entirely, 100% Cruella de Vil-like white, and not some shade of dumb, overdone silvery-blueish white (*cough* Every other Inu-yasha character *cough*) is uncommon.

I wonder if they've ever used a colour outside of the visible spectrum...

Or more accurately
"Wow, you're bald!"
"No, my hair is INFRA-RED!"
