Dead franchise thanks Toei direction and kurumada stupid breaks for useless spinoffs of things everyone already knows... And also it's clearing copying DB Legends gameplay mechanics on the second video

They do not use the spinoffs because the spinoffs sell very little in Japan unlike the classic Kurumada series which despite having many years sells a lot.

On a commercial level, the Saint Seiya spinoffs, especially in Japan, are worth almost nothing.

That's why they always focus on products from the old classic Saint Seiya series 1986, because it is the only one that sells well in Japan.

That's only one part of it, & not even really a major one from a production standpoint. The main reason why the classic Seiya anime is always used is because Toei & Shueisha are always involved with these products, and those two only have rights related to the OG series & any original content Toei itself created (Omega, Soul of Gold, the Asgard Chapter, etc.). If, say, Bandai Namco wanted to make a Lost Canvas or Episode.G game, it'd have to work with Akita Shoten, which has the rights to those series, specifically. Toei & Shueisha, meanwhile, would get no money at all from anything based on those two spin-offs, which obviously wouldn't make either of those two companies happy. The only exception would likely be if a Saintia Sho game was to get made, since Toei produced the anime adaptation of that; still; Shueisha would get nothing from it, since Sho is also an Akita Shoten-published manga.

So, yes, the OG series is the most popular, but it's also constantly chosen because Toei & Shueisha likely have a working deal with Bandai Namco when it comes to things like video games, which means that BN may essentially have no other choice, honestly. After TMS took advantage of an opening to produce the Lost Canvas OVAs from 2009 to 2011, it's obvious that Toei (& Shueisha) will never want to risk giving anyone else a chance to make Seiya money in place of them ever again.
