Ok, I just started watching Hunter X Hunter today and I've watched the first 2 episodes and still have not yet figured out exactly what a hunter IS and what a hunter DOES. I've come to the assumption that they have something to do with animals (?) and that they can not be knocked out with one punch.
Will I find out if I keep watching or can someone please explain it to me?

Yes by all means continue to watch the series. It is explained very well as you progress through the episodes. Basically the whole reason that Gon wants to become a hunter, and what he has to go through to become one, will tell you many things about what it is a hunter does. Keep in mind that Hunter x Hunter takes place in an alternate reality / futuresque Earth world so the term hunter does not mean the same thing as it does on our world. Plus there are many different types of Hunters depending on what specialty each hunter candidate has an interest in pursuing.

Well, Hunter is a loose term and can mean alot of things. A Hunter is someone who is qualified to pursue tasks and missions too dangerous for anyone else, and these can range from killing or even protecting rare and dangerous animals, discovering ancient ruins, researching ancient civilizations, finding rare delicasies (a gourmet hunter does this) or hunting down wanted criminals (a blacklist hunter's job). A person with a Hunter card has free access to all public facilities and can travel to any part of the world, even areas restricted to normal civilians. In the story there are many reasons as to why someone would want to be a Hunter, as you can see.

That is the first mistake everybody does when they hear from the title " hunter " being in conclusion that it has to be about animals.
In contrary i would call this anime very confusing and unpredictable. there aren't chasing animals in subject of this story. it goes beyond than what the title assumes or what you would probably expect.
I would suggest you to stay on point with the story and when you get to episode like 30 or further, the story will develop to what it is exactly to be a hunter.
Episode 1 through 26 is more like an introduction and nothing special is occuring actually than a story that is developing.

The title of "hunter" should not be taken by its literal definition. In the world of Hunter x Hunter, "hunter" is pretty much a title, not a specific occupation. It's somewhat similar to obtaining a driver's license (except endlessly more difficult). There are all types of hunters, from "gourmet hunters" who utilize their strengths to hunting exotic animals and creating new recipes with them, "artifact hunters" (I think) who search the world looking for lost treasures, and "blacklist hunters", whom chase down fugitives. The one thing they all have in common is that they all posess the strength and ability needed for a hunter's job (which is basically what the Hunter Exam is testing for), but there are an array of options in which the hunters can utilize their ability.

I also have a question about this anime. I just finished watching all the episodes, but there was an unfinished business in the story. The final fight against the Ryodan or the Spiders was never mentioned in the story. Did the manga version went beyond the anime version? If yes, would you mine telling me what happen.

Ya like the best part EVER was when Killua went to go re-take the test and became a Hunter in an hour, just by beating up all the others That was the best test ever.

I don't believe there ever was any manga made to wrap up that end to the story, which is indeed sad, but if there was any manga I'm pretty sure it would've been animated. But don't quote me on there not being a manga continuation.

What final fight? There's never really a "final fight" against the Ryodan; the last thing that happened was Kurapica and co. pulling a manuever ultimately resulting in Danchou losing his ability to use nen.
Did you watch any of the OVAs, or did you just end with the TV series? If the latter is true, I can understand why you aren't very satisfied; the York Shin arc is concluded by the first OVA, and the TV series leaves you hanging right in the middle.

In Greed Island Final, the Ryodan's member, along with Hisoka, found a guy that can remove Kurapica's chain abilities. Therefore, there is this possibility that Kuroro's nen was restored.

I haven't watched that far, but I do know that the manga continues past the anime, and according to my friend (who has read up to the latest chapter and is a huge HxH fan), you barely see the Ryodan again after Greed Island.
