Manga suggestions please?

The way I started out reading manga was an issue of shonen jump I got at an airport. So after that, I of course read shonen manga (as well as watch shonen anime). But then after starting to read/watch fansubs and see other kinds of anime/manga, shonen plots became quite dull, and that's what seems to be the most popular/recomended type of manga. So if anyone could please recommend good non-shonen manga, that would be great. My favorite manga I've read (which is shonen, but sure doesnt act like it) is Death Note. I love the way the characters (mainly Light and L) are really interesting and are having this giant war sort of. Also, it has great plot twists and great dialouge (spoiler for volume 3 I believe, could be 2) spoiler[like when L shows Light those cards with the parts of the "shinigami like apples" message and ends up having 4]. Also, I like Berserk somewhat. The fight scenes are pretty good, but the parts I like about it are like when (spoiler for volume 2, all I've read) spoiler[Guts gets Puck really sad after being mean to ...it... for so long and then he fianaly thinks "am I sad...? Nah" and then goes back to his in-human self ] I love how that makes Guts seem like a more realistic character just from that one moment. Those are the only two manga examples I can give, but manga like Paranoia Agent or Mushishi (anime) would be something else I'd be into. I love the symbolism and realistic character actions and such in Paranoia Agent and the way it makes you think about every detail a lot afterwords and then you read/hear something new about it then think about that. What I like about Mushishi, is how every episode is like a movie. I dont know what makes the episodes so good, but they are (good main character I guess? and good plots). And you get a new plot each time. Some manga I've been thinking about are Monster, Plantetes, and 20th Century Boys. While I have already mentioned them, it's only from what I've heard about them so I would still appreciate somebody recomending them, or seconding them I guess. I suppose I want a good drama manga, with a deep plot/characters, like the manga I've mentioned. Well thanks for reading this, any help would be appreciated.

Thanks for the suggestions, I guess I'll start out with Monster for sure (it seems to be the best choice, and its liscensed in america and I like owning the volumes, and to me it seems monster isnt subbed badly or anything), along with 20th Century Boys or Planetes or something (I'm into Planetes because it's short). Eden and Dragon Head I hadn't heard much/anything about before but looking them up on the manga encyclopedia, they both seem really interesting, I'll think about checking those out as well. I guess I'll also look into the Mushishi manga since the anime is pretty much my favorite anime.

One other thing...if you're looking for deep characters, try Berserk. The protagonist is one of the best-developed characters in all of manga, and the story is..well, the best.
