Actually, on most of the songs Kajiura Yuki makes (if not all) she doesn't sing. On the .hack soundtracks, Emily Bindiger and Ishikawa Chiaki do the singing. Kajiura Yuki does the lyrics, arrangement, and composition of all of the music.

I just thought of another song that really gets me quite mellow and also tend to move me when I think of the girl I'm dating.
The updated rendition of Sinatra's "Fly Me to the Moon" almost always brings a smile to my face. Or, as the Guiness Draught people would say it... BRILLIANT!

Voices from Macross Plus is really moving
So's the End Theme from Blue Gender.
Love most of Noir's soundtrack as well.
BUT, I love to listen to anything sung by Michi Tomizawa (who plays Rei hino and Sumire Kanzaki). I just love the sound of her voice

Are you talking about the Aya Londo version from Evangelion?

Trigun OST 2 has moved me recently, especially the songs scattered rain and rakuen (paradise). Tsuneo Imahori is a amazing musician.

Possibly? I dont know what it is truly called. It's the regular tempo version that sound like a woman is singing it. NOT THE HIGH PITCHED ONE!!!

Not completely sure, but most versions of Fly me to the moon in Eva were sung by Aya Londo.

Hand Maid May moved me...far away from my CD player.
I know, cheap shot--but a deserved one.

Anything by Yoko Kanno, but particularly Cowboy Bebop and Wolf's Rain really get me in the emotions area.
Standouts:
Cowboy Bebop: Blue, Call Me Call Me, Space Lion, ELM, Green Bird, Words That We Couldn't Say, No Reply, The Real Folk Blues, See You Space Cowboy, Wo Qui Non Coin, Is It Real?, Fingers, and Dijurido
Wolf's Rain: Leaving on Red Hill, Strangers, Sold Your Soul, Gravity, Heaven's Not Enough, Shiro Long-Tails, Beyond Me, Face On, Friends, Tell Me What the Rain Knows, Trace, Sad Moon, Cloud 9, and Go to "Rakuen"
Believe it or not, there's also a few very, very moving Pocket Monsters songs amongst the genki and fun ones.
Pokémon: Kaze to Isshoni, Namida Nochi Hare, Inori, Oyasumi Boku no Pikachuu, Minna ga ita Kara, Boku no Best Friend E, Ashita Tenki ni Shite Akure, Soko ni Sora ga Aru Kara, and Chiisaki Mono.
A few other moving songs from various series that I love include: Hemisphere (RahXephon), Tune the Rainbow (RahXephon), Garden of Everything (RahXephon), Allay Pain (Witch Hunter Robin), Half-Pain (Witch Hunter Robin), Decision (Witch Hunter Robin), Lost Friend (Last Exile), Over the Sky [Angel Feather Remix] (Last Exile), Requiem to the Air (Last Exile), Bran-New Love Song (FLCL), Carnival (FLCL), One Life (FLCL), Hybrid Rainbow (FLCL), and Last Dinosaur (FLCL).
I really feel music, and I'm a soundtrack junkie, hence the long list. ^^;;

For me the soundtrack to GTO always seems to fit the mood of the series perfectly. Even though they repeat a lot of the same themes over and over again, the music still moves me a lot.
The soundtrack to Berserk also seems to move me quite a bit, and this I cannot understand. Even though a fair amount of it is good, there is some really bad music in that series too(i.e. the ending theme ).

The soundtrack for Escaflowne: The Movie is excellent, especially with the song "Sora" by Shanti Snyder.

The End of Evangelion soundtrack moves me quite a bit. I love it a lot, in fact, I wasted two pairs of batteries on that CD.

For me, it has to be the soundtrack to Haibane Renmei, especially the ED theme, "Blue Flow". The music is haunting, almost tear-choked, and the lyrics reach out and grab you. Look at this (my translation):
Naze wasuretai no?
Nee, omoidashite
Atatakai hoho ni furu
Namida no negai
Naze furue nagara
Ima motome au no?
Kimi dake o nando demo
Dakishimetai kara
Why do you want to forget?
Come, try to remember
I wish, as tears fall
Down my hot cheeks
Why, as we tremble
Do we now come together?
It's because I want
To hold you in my arms forever.
All of this, on top of one of the most haunting melodies I've ever heard. I really love that song.
