This may be leaning too much into the silly for me, something I hope they avoid in the third movie.
But more than that, I’m also left wondering what the point even is? It would’ve made more sense to make a Team Chaotix show.

Sense in what way?
Unless they’re going to be in the next movie (and play a major role in the plot) or they’re going to at some point adapt Sonic Heroes I don’t know why they’d do that.

It would make more sense if it ended with some sort of tease regarding Rouge, and that ends up linking to Shadow.

I mean in the sense that if you brought in the Chaotix, it would be a few birds with one stone; introduce more characters from the game, expand the lore, and trying to solve a mystery would give a good excuse to have Knuckles traveling around.
As of now, the show is just Knuckles training some OC character no one cared about in the previous films and fighting against some human grunts. I’m not sure what the hook is supposed to be, besides the inherent appeal to Knuckles fans.

You answered your own question there. It's the appeal to Knuckles (& Sonic and all the rest) fans. And maybe it'll tie into the 3rd movie (the Sonic Cinematic Universe?) buuttt ultimately probably not
I'm glad they picked Knuck If You Buck for the trailer, truly the best possible needle drop pun possible.

It looks fun enough even if I wish there were more game characters, the villains seem kind of underwhelming, and Pachamac is...randomly there.
But hey, Knuckles' cowboy hat!

By the same token who would a Chaotix spin-off appeal to given they’re far more obscure to a substantial portion of the Sonic fanbase than Knuckles is.

Unfortunately clips and trailers from the Sonic films are classified as "for kids" and youtube has an automatic policy to turn off the comments for any kids videos.
